Homestyle Stuffed Peppers

Reviewed: Apr. 23, 2012
Pretty tasty. I used brown rice instead of white and crackers instead of bread crumbs. I'll play around a little next time but it's not really necessary. Next time maybe add Worchestschire sauce and ground ginger... Hmmm

Clark's Quiche

Reviewed: Feb. 12, 2011
I'm not looking at another quiche recipe, ever.. the best! Used almost all organic ingredients. I omitted the bacon. I used fresh rainbow chard cut into strips instead of spinach and mixed it into the onion mixture seconds before I removed it from the burner; chard wilts quickly. I added chopped garlic to onion mixture. I used pre-cooked thickly sliced quality pork roast that I bought from the deli and cubed it. I used MARIE CALENDER Deep Dish pie crusts. Reduced amount of half and half. Omitted Monterey Jack cheese (not necessary). Reduced the total amount of cheese; you simply don't need so much. You can tell while you're grating how much you need. I actually can't wait for my in-laws to visit so I can make this for them :) THE ABSOLUTE BEST!!!

Irish Chicken and Dumplings

Reviewed: Oct. 2, 2009
First of all, this recipe is amazing! I bought 2 delicious already baked chicken breasts from my local deli, which I almost always do for recipes like this, pulled off the skin and shredded them by hand. I didn't add shredded chicken to the stew until the last 10 mins of cooking, just before dropping in the dumplings, which I made from scratch. I used a can of chicken broth instead of the suggested 3 cups of water, I also ended up adding a cup of water to thin it out a little. I used only one onion, which a chopped instead of quartering, and I used only two russet potatoes and I'm glad I only used two because it was plenty. I loved that this recipe included so many great veggies! Easy recipe; not too time consuming, for me anyway.. just some chopping and shredding chicken while veggies are cooking away. Thanks this recipe.. I'll be using it often:)

Cabbage Rolls II

Reviewed: Sep. 29, 2009
Super! I steamed the cabbage as some reviewers suggested (10-15 mins) and cooked the cabbage rolls in the oven for an hour instead of the slow cooker. This was the first time ever making cabbage rolls and was very excited! Don't forget to double the sauce!

Golden Potato Soup

Reviewed: Sep. 23, 2009
If you are making this as a main dish, this serves two adults. If you intend to serve more than 2 people, double the recipe. I made the recipe as is except I used a whole 14 oz can of chicken broth instead of the water + bouillon, and used cheddar cheese instead of American. I used pork roast from the deli at local grocer. This was really good!

Angela's Awesome Enchiladas

Reviewed: Aug. 21, 2009
These were outstanding! I used three pre-baked chicken breasts from my deli and used Monetary Jack cheese instead of cheddar. Next time I'll try with corn tortillas. Yum-o!---- UPDATE: You must try these with corn tortillas, they're so much better this way. P.S. You only use like half of the meat mixture so plan accordingly; you may want to double the sour cream/ cream of chicken mixture, buy extra cans of enchilada sauce and olives, and more green onions so you can double the recipe; you don't want to waste all that chicken mixture. Also, there is no need to shred the chicken with two forks, just use your fingers and save some time for crying out loud:)

White Cheese Chicken Lasagna

Reviewed: Aug. 17, 2009
I make Chicken Alfredo all the time and I needed a little change. This was VERY good. I used a 5 oz pkg of fresh spinach, which I had sautéed in about 1/4 cup of water until wilted. I might use 10 oz next time even though I feel 5 was just fine for me. Cubed two skinless chicken breasts and sautéed in same pan I used for spinach with 2 TBPS butter, minced garlic, and 2 tsp Italian Seasoning. I didn't add the oregano and basil.. only Italian Seasoning.

Brown Sugar Meatloaf

Reviewed: Aug. 5, 2009
This was amazing! Loved the glaze!! All the glaze went on top. Used 2 lbs burger. Reduced brown sugar to 4 TBSPs, reduced milk to 1/2 cup, used only 1 egg, added chopped celery, added 2 TBSPs Worcestershire sauce in the burger mix and another TBSP in the brown sugar/ ketchup mixture. Used home-made breadcrumbs instead of crackers. Formed into loaf and baked in a 9X13 casserole dish. Didn't have a grease problem; I only had to drain once. Again, this was incredible!

Homemade Vanilla Pudding

Not bad at all.. I added and extra 1/2 tsp vanilla. Used 1/3 cup sugar and only 2 TBSP cornstarch. This was the first time making pudding and I had no idea how easy it was. I'm never buying the box again. I'll use this recipe from now on.

World's Best Lasagna

Reviewed: Jul. 6, 2009
Absolutely love this recipe!! This was the first time I've made a lasagne and I think I need to look no further. Thanks to all the reviewers who suggested the hot water + noodles instead of boiling them. Brilliant. I filled up my tea pot with filtered water and brought it to a boil, then added to the noodles, which I had laid flat in a pan. I kept this in a warmed oven until I was ready to build (about 30 mins). I also used fresh basil, instead of dry. By the way, this recipe makes a LOT of sauce and had to freeze the remaining. I may make another mini lasagne with it. I built it the day before baking. I'm never buying frozen again!

Absolutely Best Brownies

Reviewed: Jun. 26, 2009
Mmmm... these are wonderful. I had a craving for brownies, but didn't have any baking chocolate, but rather cocoa powder. I found these and they were a great success. I used all-purpose flour and they turned out perfect since I prefer more of a fudge brownie than a cake-y brownie. I served them with powdered sugar on top and strawberries on the side. Perfect!

Chocolate Pound Cake III

Reviewed: Jun. 10, 2009
I was really excited about this cake. I even added 1/2 cup chocolate chips and a few TBSP cherry pie filling. It stuck to my Bundt pan terribly!! I spend a lot of time and money on this recipe and am very disappointed. I took the advise of even trying to use Crisco to grease the pan and it still stuck:( I'm glad I was only experimenting and not planning on presenting it. The whole top was demolished. I wish the recipe included how to not make it stick. Butter and flour simply doesn't cut it. Taste is okay, but for me presentation plays a significant role.

Grandma's Eggless, Butterless, Milkless Cake

Reviewed: Jun. 6, 2009
What gives this cake flavor is the SALT, which this recipe omits, vinegar, and of course the chocolate. I actually have this recipe from a vegan cookbook and the differences are: 8 TBSP Cocoa instead of 6; 3tsp Vanilla instead of 2; and 1 full tsp of salt! I love the recipe I already have and think I will stick with it, but this one is good as well and would be particularly useful for those who are also watching their salt.

Iced Tea II

Reviewed: May 14, 2009
I took the advice of another reviewer and added sugar to the boiling water ending with smooth results. Added 1/2 cup of sugar and only 1/4 cup of lemon juice...yum. You only need to steep for 5-10 minutes. One hour is a bit much, for me anyway. The longer you steep tea, the more bitter it becomes. It's a great tea and doesn't need my adjustments. I adjusted it to my taste because I will be the one drinking it. Is there anything special about this recipe? I don't know, because it is only tea, a mere three ingredients. What would make an extraordinary tea?...lol. I'll never buy store tea again for sure.. Thanks for the recipe!

Pico de Gallo Chicken Quesadillas

Reviewed: May 2, 2009
The salsa itself was incredible! I used a little bit of it to make home-made guacamole and it was just out of this world. The part about cooking the chicken in the Pico de Gallo didn't work out so well for me . It made my tortillas soggy, which made it impossible to turn the quesadillas in the pan. I should have possibly drained the salsa before combining it with the chicken. Also, the flavor was a little bland for my taste. I may use this recipe again, especially the Pico de Gallo, only will try to prepare it differently or will make nachos with the ingredients:)

Marshmallow Crispie Bars

Reviewed: Apr. 22, 2009
These are awesome!!! I should have taken the advice of doubling the recipe. I only filled half of my pan for the desired thickness. I also just used my hands to flatten the Krispies into the pan because wax paper sticks so bad. Just make a nice thick layer of butter on your fingers so it doesn't stick to your fingers and go to town:)
