About this Cook
Grew up as an army dependent and got used to moving. The longest I've ever lived in one place is 7 years. Meal times are one of the times that a family consistently gets together so I feel that it's important to keep them enjoyable.

My favorite family cooking traditions
Christmas cookies? It's a tradition anyway . . . I usually wind up making about 50 or 60 dozen cookies over the Holidays as gifts, etc. I have a serious love/hate relationship with cookies by the end of the "baking season".
My cooking triumphs
Managed to feed my family and have everyone like the meals for 2 weeks over Christmas! Might not sound like much, but my mother is allergic to tomatoes and rice (among other things), my husband is allergic to wheat, my father is diabetic, and I'm on a diet.
My cooking tragedies
Not many thank goodness! I did have a spell where I could not seem to remember to put water in the pot before I put the vegetables on to steam. I did this about 3 or 4 times in a two week period and managed to ruin a stainless pot. I blame it on having a newborn!

Amy's Sensational Summer Salad
Gotta admit, I wasn't sure about the Italian dressing marinade for the chicken with the fruits, but it was great! I did do some changes, as I was making this for my family. I had to skip the avocado (2 people will NOT eat it) and the dried cranberries. Also I substituted a mix of diced mozzarella and Havarti cheeses for the feta. I let everyone dress their own salad. I used a raspberry vinaigrette. The kids used ranch and loved it. Oh, and a sprinkle of sunflower seeds were a wonderful accent. Definitely added to the "warm months" meal rotation. Thank you for the great addition.

Mandarin Chicken Pasta Salad
This is really really good. It sounded good to me, but I was afraid that it wouldn't get past my husband and son . . They can be pretty eclectic, but I thought this might just be too different. Then my ten year old son invited one of his friends to dinner as well. They ALL cleaned their plates and went back for seconds. And my husband requested that I find more recipes similar to this for summer dinners! I made almost exactly per recipe. Just substituted green onion for the red, and added a bit more orange juice & sugar to the dressing per our tastes. In the rotation for our long summers.
