Four Spice Crackles

This is the BEST spice cookie recipe I have ever made. I've been making it for about 5 years now and I don't change a thing. I bring them everywhere, especially around the holidays, and always get asked for the recipe. I find they cook better in a gas oven (as opposed to electric) and the trick is to take them out as soon as they start to crack. Cooking them on parchment paper also keeps the bottoms soft! LOVE this recipe!

Autumn Muffins

LOVE this recipe - I make it every Sunday and they carry us through the week for breakfasts. Instead of figs I use raisins. Instead of hazelnuts I use walnuts. Everyone loves them, even the kids. I occasionally substitute wheat flour in - 2 cups whole wheat and 1 cup white and it's still amazing. Make sure to use fresh cranberries - they are what makes this muffin yummy.

Banana Sour Cream Bread

Really really good, but holy cow - 3 cups is a lot of sugar! We all enjoyed it but consider it more of a desert than a breakfast food since it has so much sugar in it!

Zucchini Brownies

Amazing! I make these all the time. I put in a bit less sugar and I use 1/2 applesauce and 1/2 oil and it turns out great every time. Make sure you shred the zucchini (not grate) - it needs to be shredded finely to moisten the batter.

Creamy Potato Leek Soup II

Yum!! This is so good. Instead of canned broth, I just boil some veggies (celery, carrots, onions) in water and add a bit of powdered chicken stock for flavour. Once it's done cooking, I blend in a food processor (everything except for the bacon) to make it smooth and creamy - I add the bacon after and it's such a nice warm comforting soup.

Chocolate Mint Cookies I

After searching more than a dozen stores for Andes mints (I kid you not), a friend suggested I try mint chocolate chips instead. So I put 4-5 mint chocolate chips on each cookie and let them melt the same way so I could spread them once they'd melted and they were soooo yummy! Just as good as they were when I made them last year with the Andes mints! This recipe is fantastic!

Chocolate Chip Banana Muffins

Really good as mini muffins! The kids love these. I used sour cream instead of the yogurt (I had both but I prefer the taste of sour cream), used 1 cup white flour and 3/4 cup whole wheat, and I used mini chocolate chips for the mini muffins. They needed about 17 minutes in the oven.

Granny Kat's Pumpkin Roll

I wanted to like this but it just didn't taste very good. Maybe I undercooked the cake - it was too moist. And the cream cheese taste was really overpowering. Unfortunately nobody ate it when I made it for Thanksgiving.
