About this Cook
I have a husband who loves to cook, so I have not had a chance to cook a lot in our 16 years of marriage - until now. I am a cancer survivor who is now at home all the time, so I try to cook as much as I can so his meal is ready when he comes home from work. I use the recipes found on this website a lot if the time. My energy level is low so I find the easy ones and give them a try.
My favorite things to cook
Casseroles and desserts
My favorite family cooking traditions
Duck, fried fat back, collard greens, black eyed peas and corn bread for New Years Day.
My cooking triumphs
Apple Enchiladas, found on this site.
My cooking tragedies
My first biscuits - could be used as baseballs!

Fresh Strawberry Upside Down Cake
YUM! My five year old grandaughter made this for my birthday (with a little help from PopPop). It was delicious and so easy, even a five year old can make it. We are making it for our church's valentine dinner this week. I can't wait to take the credit for making such a great cake!

Apple Enchilada Dessert
This is so good and easy to make. I made it for a church pot luck and had to pass out copies of the recipes the next Sunday. I made it once with cream cheese, like one reviewer said, and I did not like it as well as the original. Only advise is to be sure to pick up flour tortillas and not corn. I made this mistake once.

Bread Pudding II
Wow! Just like Grandma's and so easy. Instead of the bread slices, I used 4 cinnamon/raisin bagels. We have a pot luck dinner at our church every Wednesday night and I made this for one of them. It was gone before any other desserts. I had to make copies of the recipe for 7 of the ladies. Now when I go in the door on Wednesday nights they all look to see what I have brought.
