Sweet Pork Slow Cooker Chili

This has an interesting flavour combination. The adults liked it , but kids gave it a thumbs down. I added a can of kidney beans and as I didn't have 2lbs of pork I used 1 each of pork and beef. Also I was out of paprika so used about 1 tbsp of chili powder (which gave it a nice bite and probably why the kids didn't like it). I think I may use more pineapple next time, it added a tasty flavour.

Italian Summer Squash Polenta Bake

tasty and interesting way to make a veggie side dish. I made sundried tomato/basil polenta instead of buying ready made polenta. I cooked the veggies just until barley tender so they had a nice satisfyng crunch when served. Very good.

Sausage Egg Squares

Really tasty! Great for dinner too. And the warmed up leftovers made an awesome quick and filling breakfast sandwich between a couple slices of whole wheat toast!

Layered Fiesta Casserole

Like a mexi-lasagne! I sauted an onion in a bit of olive oil before adding the beef then also added about 1/2 tsp cumin and a couple cloves of crushed garlic with the beef. Didn't toss in the peppers (only had red and yellow) until the beef was almost done. Used one rinsed can of corn and one can of rinsed black beans and added a can of chopped green chilies. Turned out great!

Poblano Chicken Enchilada Casserole

Rave reviews. On advice of others I roasted and peeled the poblanos and shredded the chicken once cooked. I used a Mexican blend pre-shredded cheese. I cut back on the peppers since I have some tender palets to feed and instead made a tomatillo salsa verde to serve with to spice it up for those of us who like it hotter. I also cut the tortillas into strips. Will definitely make this again.
