Kung Pao Chicken
I septupled this sauce (or something like that) and went with the more water (or less cornstarch!) suggestion, but kept the same amount of water chestnuts and it was delicious!

Linguine with Cajun-Spiced Shrimp and Corn
Another classic that I've held on to. Be careful about the butter and you may want to use less pasta but other than that mmmm!
