Korean BBQ Galbi

This is an awesome recipe! I make this once every few months for my fiance. I simply combine all marinade ingredients in a blender and blend them, and let the meat marinate for 2-3 days in a ziplock bag in the fridge. I use 5 kiwis instead of an asian pear, and I like a little more brown sugar than the recipe calls for. Also, when it's time to serve them, I like to cut them into segments with my kitchen scissors, which makes for a great hands-on meal!

Chicken Asparagus Roll-Ups

This was so delicious! I was a little hesitant while putting them together but the finished product was amazing! The changes I made are as follows: I had no tarragon, so I used marjoram. I added a tablespoon of Worcestershire sauce in the sauce. I didn't have provolone so I used muenster cheese. Following other reviewers' advice I coated the inside of the chicken with the sauce before rolling it up, and I used five pieces of asparagus. On the outside of the rolls, I smeared sauce all over with my hands and rolled them in panko rather than just topping them. Like I said, they were so awesome, and I will definitely be making them again, probably to impress someone!

Cinnamon Bread I

This was moist, not oily, and not too crumbly! I followed others' advice and separately mixed wet and dry before combining. I also tripled the "topping" and put it in random dollops onto half the batter, covered it, and put more random dollops on top. I then topped the whole cake with brown sugar and pecans. It required 58 minutes of baking. Oh, and I used half whole wheat flour so that it would have at least one redeeming health quality :) It came out wonderfully and it was gone within minutes at my office.

Easy Peach Cobbler

This recipe turned out great! The only adjustment I made was that I added a light sprinkling of sugar on top, which made the topping get nice and crunchy.

Peanut Butter Glaze

Awesome, simple glaze. I doubled the peanut butter for a slightly thicker glaze. I used it to top peanut butter rolls with the dough from the "Clone of a Cinnabon" recipe on AllRecipes.

Clone of a Cinnabon

These have gotten rave reviews! They were super easy to put together and very user-friendly. I did make a couple small changes. I made half cinnamon rolls and half peanut butter rolls. I mixed the butter into the brown sugar and cinnamon mixture, as some reviewers suggested, and was pleased with the results. I also only used a simple confectioner's sugar glaze for the rolls since I am out of cream cheese. For the peanut butter rolls, I simply replaced cinnamon with 2 tablespoons of peanut butter as the filling, and made the peanut butter glaze here for the topping Great recipe!

Clark Gable Pancakes

This is only the second time I've made pancakes and the first time trying this recipe--I've found my new standard! I made some adjustments based on other reviews: 1 1/2 tbsp baking powder, 1/4 c sugar, 1 tsp vanilla extract. With these adjustments, there was no aftertaste and they were still fluffy, light, and delicious! Thanks for a great recipe.

Summer Corn Salad

This recipe is simple and just right! I used frozen corn, and the flavor is still farm-fresh. I made this as a side to some Mexican lasagna. Edit: It's become one of my go-to potluck dishes. The salad gets rave reviews and I never have to take any home. It's also safe in the heat since there's no mayonnaise. I usually make the salad with the corn still frozen and store the chopped basil in a plastic baggie until about an hour before serving. By that time it's thawed, the basil isn't wilted, and is still nice and cold when people want to eat! Also, I cut the basil and onion into thin strips instead of dicing. I just think it looks nicer.

Beer Bread I

This bread worked out really nicely. I read through some reviews to get some tips on improving it a bit and it was great. I used 1/3 a cup of sugar like some people suggested. I used a 16oz can of Steel Reserve that my boyfriend picked out (apparently it's a "bad" beer). He took care of the 4 unnecessary ozs and I used the rest for the bread. One thing I was unsure about was mixing. The recipe doesn't specify if this is safe to mix a lot. I just assumed it wasn't and mixed it maybe 12 times total. In any case it turned out great and we ate it paired with pea soup and fried potatoes with smoked sausage. I'm looking forward to try a sweet version with vanilla, cranberries, and orange zest in the future. Thanks!
