Special Banana Bread

Delicious! I substituted butter for the shortening (which I never use because it's loaded with trans fats which are terrible for you)...next time may try applesauce as one review suggested to save on calories. I also didn't add the nutmeg or cloves (only because I didn't have any) and added vanilla. I was going to do 1/2 all purpose & 1/2 whole wheat flour but my daughter used all the all purpose flour the other day & didn't tell me we were out so I used all whole wheat (can't tell the difference in taste anyway - I don't think). Did 1/2 white sugar, 1/2 brown sugar. Very moist with a little crisp to the top which I LOVE and the house smelled incredible for a hours! This is a keeper!

Egg Rolls

These were very good, not quite as flavorful as I was anticipating maybe because I didn't use any meat (I like veggie egg rolls) but they were still really good!! I used bagged coleslaw mix, chopped celery, white onion, ground ginger garlic powder (that's all I had) and the sauces (not measured). NO MSG! The wraps were easy to roll and I sealed the edges with an egg/water mixture. Once rolled I made the mistake of leaving them out which caused them to stick together so some tore as I peeled them away from each other. Next time I will put them in the fridge until ready to cook up. Make sure the oil is nice & hot before adding the egg rolls. 3 bags of coleslaw made 30 egg rolls. Next time I will use 4 bags &/or the bean sprouts so they're nice & big!! This is definitely a keeper! :o]

Simple 'N' Delicious Chocolate Cake

OMG!!! ABSOLUTELY AMAZING!!!!!!!!!!!! Everyone raved about this cake, I will never make any other cake again! The coffee (still warm) gave it a nice deep chocolate flavor. I doubled this recipe to make a 13x9 cake. I used the Creamy Choc Frosting from this site which is amazing as well! Thank you so much for a great choc cake recipe! I look like a super star to my family! :]

Sloppy Joes II

These were amazing! I quadrupled the recipe to make a huge vat for camping with a small group. I got rave reviews, even my neighbor who claims to not like sloppy joes went back for seconds!

Easy Sugar Cookies

My 10 yr old daughter has been making these (BY HERSELF!!!) and asked me to save this recipe. They turn out delicious every time!! Super easy and we always have the ingredients on hand. :o]

Classic Macaroni Salad

YUM!!! I used 1.5 boxes of macaroni noodles but kept the sauce ratio about the same (just over-measured on the mayo). I did cut the sugar down to a little shy of a 1/4 C & added a some finely chopped red pepper instead of pimento. VERY happy how this turned out (see my pic). :o]

Creamy Chocolate Frosting

OMG!! This frosting is the best we've ever tasted....even better than store bought!! I will NEVER use any other frosting again. Made this for my son's bday cake (using Simple White Cake recipe from this site - yum). My father-in-law raved about my cake for days & said it blows away the other frosting I was using. I used regular milk since I didn't have evaporated milk & it still turned out perfect! The recipe as is covered my entire 13x9 cake leaving leftovers (for licking!!). Thank you SO much!!!! :)

Beef and Guinness® Stew

WOW! This was amazing! I made it for St. Patty's Day yesterday served with green beer! Hubby said this is the best Irish dish! I doubled the recipe just so we can have left overs and followed it to a 'T' except I didn't measure out the s&p, just generously seasoned the meat with both prior to browning. I also added diced mushrooms and thickened it up a little with flour whisked with water. Served over garlicky red mashed potatoes (see pic) and with the Irish Brown Bread from this site. Even my daughters raved about it! Personally I thought it needed a little more salt so next time may try it with beef stock instead. Love Chef's John's recipes!!! :o]

World's Best Pasta Sauce!

This sauce is the BOMB!!! I made it w/o meat because I was making spinach lasagna (from this website which is the BEST). I made a double batch of this sauce to use the rest later - hubby RAVED about it for days!! :o]

Baked Chicken Nuggets

Whipped these up for my kiddies for lunch. SUPER easy + I had everything on hand (bonus!). I love the idea of baking them rather than frying in oil - oil is such a mess & baking is much healthier! These turned out very tasty!! I only had two chicken breasts but it was enough for the four of us...I had a ton of leftover breading. My two older girls didn't rave about them, they said the were good tho. My 2 yr old gobbled them up! I served them with honey-mustard, BBQ & honey (didn't have any ketchup).

Delicious Black Bean Burritos

AMAZING!!! I never thought going meatless could be so good! This tastes a lot like Chipotle!! A few changes I made based on some reviews I read were: I doubled this recipe + added 1 can of Rotel, cooked brown rice & omitted the jalapeno (so my daughter would eat it). Also instead of adding the cilantro to the skillet mixture, I put fresh, raw cilantro and shredded moz cheese on top of the warm mixture before rolling the burrito. I didn't add any spices but did add a little extra salt (used Kosher). I also didn't top the burritos with salsa 'cuz I thought it would be a little much. Can't wait for lunchtime (there's just enough left for 1 more). Next time I will quadruple this & add more onion. MmmmmmmmmMMM!! Thanks for a great recipe, this is definitely a keeper. :o]

Basic Flaky Pie Crust

WOW! Simple & tasty!!! I've never made pie before but we recently went apple picking & my family wanted homemade apple pie. I couldn't believe how simple this crust was! I used butter instead of shortening (I never use shortening 'cuz it looks gross, like something that came out of a clogged artery [and probably would some day]!). DOUBLE FOR 1 PIE IF YOU WANT TOP LAYER! To double add: 2 1/2 cups flour, 1/2 teas salt, 1 cup chilled butter and 1/4 cup AND 2 tbs ice water (based on GingerB's 9/03 rating). This one is a keeper for me! I'm not much of a sweet eater so I'd love to try it with a homemade pot pie too. :o]

Fluffy White Frosting

Very tasty and I like how glossy it is but it is not firm so hard to shape (not a big deal for me). My family loved it! Used for my Valentine cupcakes (using my go to choc cake recipe from this site - Simple 'N' Delicious Chocolate Cake by J. Miller - YUM!). I usually use chocolate frosting (from this site too) but wanted white so I can color it for these. Very easy & it DOES taste like marshmallows! :o]

Italian Spaghetti Sauce with Meatballs

This dish is phenomenal! I doubled the meatballs and did 1.5 lbs ground beef with .5 lbs ground pork. I used about 22 meatballs and froze the rest for another meal. Also added Italian seasoning. For the sauce I pureed fresh tomatoes from our garden. This was my 11 yr old's bday dinner request she loves it so much!!

Jim's Cheddar Onion Soda Bread

This was SUPER easy to make and went perfectly with the "Chef John's Irish Beef Stew" I made for St. Paddy's day last night. A nice dense rustic bread great for any soup, stew or even chili! I sauteed the onions and added crispy bits of bacon I had leftover. I didn't have buttermilk so used the milk/lemon juice substitute adding about 1/4 cup extra as some suggested (may add a little more next time). I also didn't have parchment paper so I used aluminum foil dusted w/ flour. I skipped the dusting on top of the loaves and instead brushed the tops with melted butter. I like that you score with an X before baking because it breaks off nicely into big chunks (no cutting required). Next time I may try it with green onions and score the loaves before baking into smaller pieces or make individual biscuits. :o] *~* the milk/lemon juice substitute is: 1C regular milk with 1 tbsp lemon juice, let it sit for 10 mins before adding - adjust as necessary for your recipe, so I did 1 1/2 C milk with 1 1/2 tbsp lemon juice for this recipe *~*

I was amazed at how simple and tasty this frosting is!! I'm so glad I don't have to buy the trans fat (horrible for you) frosting from the store anymore!!! I know what's going into this frosting. :o]

Simple White Cake

WOW! I can't believe how good this is! I'm SO against partially hydrogenated oils that the store brands put in their mixes so decided to give this a try and was very pleased. I doubled the recipe for a 13x11 cake and it baked up nicely! Based on other reviews, I made sure to take my time mixing all the ingredients well. I made a green poke cake for St. Patty's day using the Poor Man's Frosting from this site ('cuz store brands have transfats/HFC) and it turned out very good!! See my picture.

Spinach Lasagna III

We just started going meatless during the week (trying it out - to do our part to try to save animals lives + for our health!) and WOW!!...this IS the absolute BEST meatless lasagna EVER!! I made this last night for our anniversary dinner. Even tho we were both stuffed after a few pieces we couldn't stop eating it and then went back for more a few hours later! Even my daughter who can't stand meatless pasta raved about it and wanted seconds. I did make some minor changes based on some of the reviews I read. I bought a 10oz tub of baby spinach. Rinsed it, chopped half of it & sautéed it with the onions, mushrooms, garlic & olive oil (the aroma is incredible). I added an additional 1/2 TBSP of garlic 'cuz we like a lot of garlic. I bought 2 different jars of sauce (Barilla Mushroom and Barilla Roasted Garlic & mixed them - we like a lot of sauce too). I did 4 layers and in between 2 of them added a layer of fresh spinach (not chopped). I layered it like this: sprayed bottom and sides of dish with cooking spray, spread a little sauce on bottom, then added a layer of 5 noodles, cheese mixture, sauce, spinach, shredded moz & shredded parm cheeses, repeat. Darn it, I wish I took a picture...next time. Next time I may do 3 or maybe all 4 layers with the spinach too (rather than just 2 of them). Mmmmmmmmmmm! Can't wait to eat leftovers today!! :o]

Ninety Minute Cinnamon Rolls

WOW! I will NEVER buy store bought again!!! My family raved about these for days and I have to admit, these were fun to make (and not too hard, in fact, I did them in our camper while up north (WI) - just premeasured the dry ingredients before we left). I omitted the raisins and baked them in a muffin pan (perfect!). I used "The Perfect Cinnamon Roll Icing" from this site. Love the fact that I KNOW what is in these rather than the laboratory stuff. AMAZING!!
