Chef John's Stuffed Peppers
I've made this a couple of times now. I add a ton more balsamic vinegar to add some tang, but that is the only change. I usually make the night before and refrigerate. Because they're cold, I cook at 375 for an hour and five minutes, then uncover and cook for 15 more. They come out perfect!

Southwest Chicken Bake
Hubby loved it and it was really easy! I made a larger batch with 2 lbs of chicken, 1 whole can of black beans, 1 packet of taco seasoning, 1 can of mexicorn, and two cups of salsa. Will definitely make again!
