Penne with Spicy Vodka Tomato Cream Sauce
Excellent dish. Of course I made a few modifications. Since I was cooking for six, I went with 10 medium organic chicken sausage links. I also added green peppers, 6 to 7 cloves of garlic, omitted the parsley and added three to four pinches of basil and oregano. I also added six pinches of freshly grated romano, parmegiana, and asiago cheese. Double up the vodka sauce if you plan on adding more sausage like I did. Dont worry the sauce will thick as it simmers. It turned out amazing. In fact this is my new favorite pasta dish. Its so tasty and comforting.

Chicken Parmigiana
A very easy restaurant style dish. Ive tried other chicken parm dishes and this seems to be the one that has hit the spot. Ive made some minor changes of course as everyone does. You need to add your personal touch. I use parmesan bread crumbs. I also top the chicken with some fresh basil and tyme before baking. I dont bake the chicken with the sauce, I wait 40 minutes until the chicken is crisp and then pull out the baking sheet and put a little bit of sauce under neath each filet. I find that this doesnt make the chicken soggy. I top the chicken with some homemade sauce, which is just mashed tomatoes, basil, garlic and some pesto. I top that with freshly grated parmigiana and mozzarella and bake until the cheese is brown on top. Wow is this tasty. I then serve it with some fine angel hair pasta and a lasagna roll. What a meal!
