Chunky Corn Chowder (Vegan)

Very good, however, the second time I made this I did add some other seasonings. I did add celery, 1/4 cup, thyme, and a pinch of red pepper. We did like the fact it was vegan. Thanks.

Shrimp Red Thai Curry

Bland, but qick. I've found, when using peppers, one can never tell the spiciness of the dish until tasted. Therefore, if you you do not care for a lot of heat, start with half the amount called for. For my family we start with the amount called for and go up from there!:)

Old Fashioned Lemon Pie

Patience is the key here. I did modify the recipe after the fist go around, for my family it was too sweet and not lemony enough. Since the first pie, I use the following modifications: 1. Cook directly on the burner and whisk almost constantly, let the mixture boil for two minutes while whisking constantly so as to not burn (it takes a while). 2. Reduce the sugar to ¾ cup. 3. Increase lemon juice to ¾ cup. 4. Use 2 Tablespoons lemon zest. Cooling the mixture before placing it in the crust is essential. The four stars is for the recipe as written, before my modifications.

Potato Rosemary Rolls

These rolls are soooooo good! The texture is perfect and they are simple to make. I added 1 teaspoon of chopped fresh thyme, 2 tablespoons of chopped fresh parsley, 2 finely chopped shallots, as well as 2 tablespoons chopped fresh rosemary. I didn't have powdered milk so I added the same amount of milk. The rolls came out beautifully! I made them the day before Thanksgiving and had to make them again on Thanksgiving because they had “mysteriously” disappeared overnight! ;-)

Gingersnap Pumpkin Cream Tart

This was tasty and easy to make. I made a few adjusments for my family's taste. Instead of white sugar in the crust, I used brown sugar. in the filling I used fresh ginger and added 1/4 tsp. ground cloves.

Italian Wedding Cake

Wonderfully moist! We live at high altitude(8,500ft) and the adjustments I made were to add 1/4cup more butter milk and decreased the shortening by 2 tablespoons , decreased the sugar by 1/4 cup, and I did not drain the pineapple completely! It was one of the most successful cakes I have made at this altitude!! :-)

Sloppy Joes II

This is a very good Sloppy Joe! We like the idea of decreasing the ketchup, eliminating the brown sugar, and adding barbeque sauce. I also add about 2 tablespoons chopped jalepeno! Yummy!:-)

Pumpkin Bean Soup

This is a great soup with a few changes for my family. We used white beans, no corn, and with the suggestions of others added,1/2 tsp more cumin, 2 tsp fresh ginger, 2 tsp curry powder, and almost a 1/2 tsp of cayenne pepper. Very tasty!

The Best Rolled Sugar Cookies

Using other's suggestions I too eliminated one egg and 1 cup of sugar and I added 2 tsp of lemon zest. The cookies rolled out beautifully, cooked perfectly, and tasted delicious!
