Easy Sour Cream Cheesecake

I make this recipe without a crust and substituting a sweetener for the white suger to make it a low carb treat. It has become my "go to" recipe. I have made it many times now. I like it with a dollop of no sugar added jam on top. I have found that the longer you beat the cream cheese and egg mixture, the fluffier it will be when baked. It really is a great base to experiment with add ins as well - try peanut butter and/or chocolate chips. yum! It is a perfectly simple and very tasty recipe!

Jill's Hash Brown Casserole

My family made this for me for Mother's Day brunch and it was wonderful! They added crumbled bacon and since we didn't have cornflakes they just topped it with some extra cheese. We will definitely make this again!

Pecan Pie Muffins

Delish, fast and easy!! I added 1/2 tsp. cinnamon to the dry mix and 1 tsp vanilla to the wet. Also be sure to take the time to prepare your pans or you will regret it! I used silicone mini muffin pans which I buttered then floured lightly. I will make these again!!

Banana Crumb Muffins

Excellent! We loved them and we will definitely make them again. I did follow some of the tips from other reviewers and I added some nutmeg, cinnamon and vanilla to the batter and some cinnamon to the topping. The recipe lived up to all the positive reviews!!

Strawberry Summer Salad

Such a simple dressing really is extraordinary! I will be making more of this luscious dressing! I did add a little extra vinegar for tartness. I just used a mixed green salad and added the red onion, strawberries and blueberries. I think this will make a wonderful dinner salad with some sliced grilled chicken on top.

Creamy Potato Leek Soup II

Simple and perfect! I made it just as the recipe is written, except I used 5 cups of broth with my 8 potatoes. Maybe my potatoes were were larger? Also I didn't peel my potatoes. I served it with a fresh grind of pepper on top and it was fantastic!

Tartar Sauce IV

We LOVED it! So much better than stuff from a jar. I just threw onion, pickles and a couple pickled okra (because I had them!) into the quisinart and chopped away, then stirred it into the mayo. Simple and delicious!
