Rhubarb Cake I

This was so good. I doubled the rhubarb, cut back the white sugar a bit, and added flour and walnuts to the topping, but otherwise followed the recipe.

Creamy Rice Pudding

This was a really good recipe. I've read that you should use a medium grain rice for rice pudding. I only had long grain so I used that. I can see how a medium would work better but the long grain worked okay. Like some other reviewers I added some cinnamon (around 1/2 tsp). I love raisins in rice pudding so I added more than the 2/3c listed - that was probably a mistake (it was very raisiny). I'd leave it as the 2/3 listed or maybe even down to 1/2c. I used almond milk and it worked well. To make sure I didn't get cooked egg chunks in the pudding I heated the last 1/2 cup of milk in the microwave until warm and then mixed the egg in that before adding the rest of the pudding.

Lemon Herb Barbeque Sauce for Chicken

This is so good and easy! I've made it several times already this summer and you can't go wrong with it. So quick and simple. I use it as a quick marinade. I let the chicken sit in it for about half an hour or so and it turns out perfectly. Once I let it sit for around 5 hours and thought the lemon flavour got too strong.The only ingredients I change are to use rosemary instead of marjoram because that's all I had.

Marinated Pork Tenderloin

I followed the recipe exactly other than baking it in the oven rather than grilling. I didn't like this recipe at all. The cinnamon was way too strong - it was all I could taste. :(

Light Oat Bread

I think I did something wrong with this one. It tastes amazing but it didn't rise very much. Everyone else said that theirs rose almost too much so I'm pretty sure I just messed it up at some point. I'll definitely be trying it again.

Jay's Signature Pizza Crust

This was really good. I wouldn't call it exceptional but I enjoyed it. The only thing I'd mention is that the recipe definitely makes enough for two pizzas. I used one 14" pan for mine. When I put it on the pan it seemed to be a reasonable amount, but it puffed up a lot more than I expected and was quite thick. Good recipe though - I'd make it again.

Dark Chocolate Cake I

This is definitely the best chocolate cake recipe I've made. I'm making it for the second time this week. I took another reviewer's recommendation and separated the eggs and whipped the egg whites until soft peaked, and folded them after the rest of the batter was finished. The batter looks so delicious and velvety before it goes in the oven. Other people said it was dry and crumbly but mine was far from either. They were quite moist and (not sure how to describe this) firm but not dense. So good!!

Chicken Piccata II

I was skeptical about this recipe at first because it seemed too simple. But I guess things don't have to be complicated to be good. My boyfriend and I both thought it was really tasty. I made a mushroom risotto to go with it was definitely a hit.

Gourmet Mushroom Risotto

This was really good! I did cut back quite a bit on the mushrooms; I probably used less than half. My boyfriend still thought there were too many but I thought it was about right. I took the advice of one reviewer and added a clove of garlic in with the shallots. The only complaint I had about it was that it was a tad salty - I think it was probably because of the chicken broth I used. It did take quite a bit longer to make than the recipe said. But all in all, I was really happy with this for my first try at risotto.

Soft Sandwich Buns (Dough Hook Mixer Version)

These turned out so well! The only thing I changed was to use half whole wheat flour. I made 12 buns and they're the perfect size for sandwiches. I used them for burgers last night and they were great. Other recipes I've tried have come out dense and not good for sandwiches but these were perfect. I highly recommend them.

Blueberry Nut Oat Bran Muffins

These were so great! The best bran muffins I've made yet. I used wheat bran instead of oat bran (since that's all I had in the house) and 2 eggs instead of the egg substitute. I didn't have the nuts or granola so I left those out. And I used half blueberries, half raspberries. I made all of these changes because I was too lazy to go to the grocery store, but I'm sure they would've been great as written too. Oh and I baked them at 350 instead of 400. It made 16 large muffins for me.

To Die For Blueberry Muffins

These were pretty good. I wouldn't say they're the best muffins in the world, but they're tasty and very easy to make. I didn't change the recipe except that I baked them at 350 degrees for about 25 minutes. I'd make them again. Next time I might add the cinnamon to the batter and skip the crumble topping (just because I'm lazy).

Banana Cake VI

I loved this cake. I took it to work and got many compliments on it. I didn't add the icing to it but I thought it was good on its own. I added a bit of cinnamon/nutmeg and some nuts. I baked it just like the recipe said and it was moist and delicious. It did take longer than the recipe said (about 20-30 minutes) but I was expecting this from reading other reviews and wasn't in a rush.

Traditional Hot Cross Buns

Mmmmm, so good! I've never made hot cross buns before and these turned out great. I used a candied fruit mix and raisins. I doubled the recipe and it made 2 dozen dinner roll-sized buns. Perfect for Easter!

Unbelievable Rolls

I didn't have any luck with this recipe. I've made buns several times and a lot of bread in the past and I've never had a failure like this. I followed the recipe exactly but they didn't turn out very well. The buns wouldn't roll into balls on the counter so they weren't smooth at all. I found them to have a strange taste to them too - I don't know if it was yeast but whatever it was, it wasn't good. After making a pan of buns I decided to try a small loaf of bread and a few cinnamon buns as well. The bread rose nicely but I don't like the way it tastes. The cinnamon buns were the only thing that turned out decently, but things usually do when they're covered in sugar and butter. lol I really wanted to like this recipe because it was easy but it just didn't work out.

Zucchini Brownies

I have mixed feelings about these. The zucchini got kind of clumpy in places and I couldn't distribute it evenly throughout the batter. Because of this some pieces were very dry (I ended up throwing those ones out), and others were very moist (and tasty). It's a good way to use up zucchini though. :)

Simple Whole Wheat Bread

Fantastic bread every time! I make it into two fairly large loaves instead of three small ones. I've experimented with adding more whole wheat flour to make it a bit healthier. It's never turned out that badly but in my opinion it's always better when I make it as written. Thanks so much Nita!

Buttermilk Pancakes II

I thought the batter was a little too runny. My first pan came out pretty flat so I added more flour (a bit less than 1/4 cup) and that made them really good - fluffy, light, and tasty :)
