Like other reviewers, I'm supposed to stay away from processed foods, so I was thrilled to find this recipe. (Who wants to give up sausage?!!) If I had known how easy it is to make great sausage, I would have made my own long ago. I thought this recipe was fantastic, although I think next time I'll cut down on the salt. After reading other reviews, I went a little light on the sage and brown sugar as well. (I used low fat pork, so the amounts as written might be fine for pork with a higher fat content.) I think next time I'll add a little fennel, as I love that in sausage, and maybe garlic. You really can't go wrong with this recipe!
