Apple Brownies

Way, way, way too many apples. No wonder there are so many complaints about this being too soggy. I make this with one apple and even then it's soggy the next day.

Caramel Macchiato Cheesecake

I made this for a dinner with my son and his friend and we all loved it! If cheesecake wasn't so filling (and we hadn't just eaten a huge meal), it would have been gone. I used a really good local coffee in it, brewed strong, and topped it with Stonewall Kitchen coffee caramel sauce. O. M. G. I almost feel guilty over how easy it was to make. It sunk... and cracked, but this only created the perfect spot for a coffee caramel lake! Next time, if I want to make it pretty, I'll follow another reviewer's suggestion to use a water bath and to not over-beat it. There WILL be a next time, though.

Grandmother's Buttermilk Cornbread

Cream Cheese Frosting II

This is how I make cream cheese frosting because I like to really taste the cream cheese and find other recipes too sweet. This is PERFECT on a good, moist carrot cake.

Black and Blue

This is one of my favorite drinks besides a Guinness draught poured correctly. A great variation on this is the Black and Blue -- Guinness and a good blueberry ale. The flavors really work well together. It's like Ireland and Maine in a glass!

Cranberry Sauce

This is the perfect balance of sweet and tart while keeping the cranberries at their peak flavor and color. I tried another more complicated recipe first, then ended up making this one. This was the clear winner. Even the kids were crazy for it. So simple, too.

Asian Beef with Snow Peas

Loved this! I followed the advice of others and doubled the sauce, which made the perfect amount. I also added red peppers and cooked them along with the snow peas. I grated the garlic and ginger on a micro-planer, which is my new toy, and I felt that added to the flavor. I would suggest using that if you have one. It's a lot faster than mincing, anyway. I will be making this again soon!

This is a great soup, especially considering how easy it is to throw together. I used chili paste instead of red pepper flakes for an extra kick. I was surprised by how flavorful it was and the cumin made the house smell wonderful for the rest of the day. Definitely a keeper.

This is an incredible recipe. The amount of sugar doesn't make it overly sweet, but it can be reduced a little according to personal preference. I added a little cinnamon to the berries and dough which added a nice dimension, but the recipe is perfect just the way it's written. I made it in a ten-inch cast iron skillet and it was the perfect size.

Smooth Sweet Tea

This makes perfect iced tea. The pinch of baking soda really is crucial to taking away the bitterness and making it crystal clear. It had the perfect amount of sweetness, too. I will be making this again and again. Thanks!

Spinach and Feta Turkey Burgers

I was surprised by how bland these were. I love spinach and feta, but somehow they just disappear in this recipe. I even added onion, some Worchestershire sauce, paprika, and lemon and still no flavor! I thought with the feta, they wouldn't need salt, but they definitely do. Good thing I made some tzatziki and had them on homemade pita bread or I wouldn't have eaten them at all.

Buffalo Wontons

I used this filling to wrap in phyllo triangles along with the spanikopita ones on the Smitten Kitchen site. They were a huge hit and not so hot that the kids couldn't enjoy them. (Use more hot sauce and less butter to make them hotter.) I used Frank's Hot Sauce, which is THE sauce to use for buffalo chicken. I also increased the amount of chicken in each triangle and, since I was using phyllo, I baked them at 375 for 25 minutes. I'm going to have to make these for every party now.

Fruit Dip VI

I made this for my son's graduation party and everyone asked for the recipe. The fact that it was so simple was an extra bonus since I had so much cooking to do. For fruit, I had strawberries, raspberries, grapes, kiwi, and cantaloupe. The dip went great with all of it, especially the raspberries!

Pumpkin Roll I

Turned out great--very easy to make. And more importantly, it tasted great and I wouldn't change anything. I took one reviewer's advice and cooled it in the refrigerator for two hours. (It probably would have taken forever otherwise.) The cream filling also held up very well. I did find, as with most cakes, that it tasted even better the next day.

Pasta Bean Soup

Very good for such a quick soup. I found there was enough salt in the broth so I didn't add any more--that was my only "change." You could definitely add more spices or ingredients, but it's great as written.

Breakfast Sausage

Like other reviewers, I'm supposed to stay away from processed foods, so I was thrilled to find this recipe. (Who wants to give up sausage?!!) If I had known how easy it is to make great sausage, I would have made my own long ago. I thought this recipe was fantastic, although I think next time I'll cut down on the salt. After reading other reviews, I went a little light on the sage and brown sugar as well. (I used low fat pork, so the amounts as written might be fine for pork with a higher fat content.) I think next time I'll add a little fennel, as I love that in sausage, and maybe garlic. You really can't go wrong with this recipe!
