Garlic Salmon

OMG this was great.... I used dried dill weed not fresh. I added two pats of butter on top of each piece of salmon and lowered the temp to 425. It was done and I let it rest without opening the foil about 10 minutes. Perfect and moist!!!

Ethiopian Cabbage Dish

Except for the oil (I used half), I followed the recipe. The oil is needed to cook the vegies and I know this now. So next time I will make up for the oil with a liquid or broth. And next time I will add the cabbage in at the last 15 minutes of cooking. They became too mushy. AND, next time I will double all the spices (not the salt)as well. I like that these potatoes, due to the other veggies, kept moist even after a couple of days. So they were a good snack.

Shrimp and Asparagus

Easy and really good with a mild buttery lemon flavor. We added 2 extra garlic cloves and just a tad more butter. Very very good and will make it again. Served with a ready pack salad and garlic bread. I havent tried the leftovers yet.

Suki's Spinach and Feta Pasta

Light tasting and mild. If your looking for strong flavor and sauce, I would suggest looking for another recipe. This one is good the way it is. Only suggestion is to add the pepper flakes in with the onion and garlic so more of the flavor comes out in the first seriving and like others, add more feta! Great with garlic bread as it would be with rotissery chicken. Yum... A keeper in my home.

Delicious Ham and Potato Soup

OMG! Made to the T and was very creamy, thick and great tasting. Not at all hard to make. I served it along side a grilled cheese and at another serving with some sourdough artissan bread. OPPs..... actually I did not add any salt.... AND YOU SHOULDNT. I think it would be too salty if added. (and I usually need more salt)

Spiced Sweet Roasted Red Pepper Hummus

Made this recipe as written. Really very easy and very very good. It does have a little kick. So if you dont want that, use less of the cayenne. I am going to add just a little more garlic next time. I went to a local Indian store for the tahini (tahina) paste. This is a liquidy past made from sesame seeds. I also picked up Naan (a great Indian bread). In all it took me about 5-10 minutes to process and serve since I had all the ingredients out. Coworkers loved it!

Cindy's Awesome Clam Chowder

6 stars! Did the recipe exact. If you like clam chowder at all, this recipe is easy and more than delicious. Next time maybe a little less bacon (2 or 3 strips less), and if you REALLY like a lot of clam, add 1 more can of clams. Thank you for this keeper of a meal. Searved with sourdough strips.

Simple Sweet and Spicy Chicken Wraps

Good and somewhat healthy! double the recipe and change the tortillas to Wheat wraps. This worked out as a cold wrap better than a warm one. As a cold wrap, the mayo does not liquefy. And add extra spinach for a nice crunch.

Ultimate Twice Baked Potatoes

Followed the recipe exact. Pretty easy to make. I followed some advise of another and left about 1/3 of the potatoe unscooped otherwise they will tear. Very fattening but delicious.

Pico de Gallo Chicken Quesadillas

Followed to the T. My advice is to cook one day and eat it the next for this one. A lot of work for one person to do and then put it together and eat right away. I mean as a quesadilla, you have to. The flavors really are better after sitting overnight. Make very small slices of the chicken. And try not to put a lot of juice into the quesadilla as it will sog up pretty fast. So chop and cook away ( and make two recipes) one night and you could have a quick good meal in a snap for at least two days. I have three men in my house and they all thought is was an excellent FAST meal. They obviousely did not see me in the kitchen for the prep part:)

This rice was a quick and easy way to change things up! Very lemony and you should know this going in due to the recipe itself. It went very well with Shrimp Francesca recipe from this site and asparagus:)

OMGosh! My man made this dish for the two of us for dinner along with another dish from here ((Out of the Hat Rice.) Fabulouso..... I picked what I wanted after reading reviews. He made both recipes exactly as called for. Very very good. Lemony, but we knew that going into it because both recipes call for the juice of one lemon. Oh, I love someone cooking for me once in a while....

Coconut Poke Cake

Akeeper recipe. Easy to make. I could not find a can that said "coconut cream" and at Stater Bro's they had not heard of it, so I used coconut milk. I searched google for answers but found some who said they were different and some said the same. So, I e mailed the company and I am waiting to hear. But from the company website, I would say they may be the same. Regardless the cake is wonderfull with the milk. Make sure to keep cold and do not leave uncovered too long as the cream hardens over time.

Peppered Shrimp Alfredo

Made this to the letter. Did not like the jar of Alfredo sauce. Next time I may find an easy recipe for alfredo (so it is truly fresh and home made). Yet, this was a keeper. If you don't want too much spice- add half the cayenne. And the mushrooms really shrink down, so us the whole 1/2 pound. Otherwise it does have a kick which we love. This was soo much better the next day. The sauce did not harden the ingredients blended and the penne was much more tender.

Lisa's Favorite Carne Asada Marinade

Exactly made it was good BUT a little too lemon/limey. Next time may omit the lime. Also, the chipotle, was so little that I wasted a whole can for a tsp. So I may omit that as well and if I want a hint of spice, add a fresh chopped pepper of some sort. Remember, it all comes off when you grill it anyway.

Low-Fat Blueberry Bran Muffins

This was a pretty healthy-like muffin that was better when warm with butter. I took the advice of others and added more blueberries;about 1/2 cup more. Not too big a hit with the youngsters. But us Older folks liked them. Sheryle & Rich

Shrimp with Tomatoes and Feta Cheese

Fantastic outdoor Summer meal. I served it with garlic bread and over white rice. Do use all the tomatoes, they cook down and liquify. And the jalapeno, the heat deminishes with the cooking. Consider adding more for added flavor. Very Meditaraian like. Sheryle & Rich.
