Mexican/Latin dishes; my grandmother was Mexican and I remember everything she made was wonderful. Growing up in Miami, we grew up with fabulous Latin dishes.

Old-Fashioned Pancakes
Just made these... used buttermilk instead of regular and added 2 extra eggs to up the protein. YUM!! My children LOVED them. They were fluffy and delicious. Will use less salt next time and add vanilla as some of the reviewers suggested.

Paleo Banana Bread
I doubled the recipe, used 6 small bananas and no sweetener. I baked it in an 8x8 pan and left it in the oven for 20 minutes longer. It smelled AMAZING while baking. Came out a beautiful dark brown. It was a bit more wet than I like even with the extra 20 minutes baking time, but the 2 extra bananas probably had something to do with that. The flavor was wonderful and will definitely make it again in a 9x13 pan or as muffins to have more baking surface. Very nice.

Golden Sweet Cornbread
Amazing!! this is the second time I've used this recipe... everybody LOVES it! Only changes I made was to add a cup of corn (had it left over in the fridge) and used bacon grease instead of oil. YUM!!!
