Chicken Massaman Curry

Me and my boyfriend loved this! Our local store did not have tamarind paste and was out of fish sauce so I followed others recommendations and used soy sauce and worcestershire. We also used half white potatoes and half yams. I added in a package of asian stir fry veggies at the end and served it over jasmine rice. The sauce had great flavor and the chicken was tender. Although I'm glad that we mixed up the potatoes and veggies to give the texture more variety. We will make this again!

Iced Pumpkin Cookies

These were sooooo good! I followed the recipe exactly except that I added chocolate chips... cause everything is better which chocolate chips, right?! They are very "cakey" cookies which I love. If you like pumpkin bread, you'll love these!

Butterscotch Oatmeal

I had some left over pureed pumpkin from making pumpkin cookies so I added it along with some cinnamon. I completely forgot the butter and only put in about a tablespoon of sugar, thinking I would add more according to taste but never needed to! (and I have a huge sweet tooth!) Very versatile and easy... I never knew to add egg to oatmeal!

White Chocolate Holiday Cookies

I use to go to this movie theater in New Zealand that had amazing fresh baked white chocolate ginger cookies at intermission... so when I saw these I got excited! I followed the directions exactly except I only had vanilla extract instead of almond. I think next time I will go out and buy the almond and add more ginger. They were very good... I just couldn't really pick out the ginger in them. Thanks for the recipe!

Gypsy Soup

This was so good! I made it in my crock pot and added some extra veggies I had around the house and cooked it all day. I also added italian sausage which seemed to fit well with the other flavors. The spices really made it!

Caramel Pear Cake

Yum! So good! Make sure you wait a bit for it to cool down... I think I tried to flip it too early and it crumbled a bit. I did as another reviewer suggested and broiled it for only about 3 min to caramelize the top. Excellent! Melts in your mouth!

Caramel Macchiato Cheesecake

This was a very creamy delicious cheese cake! We added extra coffee and some caramel ice cream topping. I think sour cream in cheese cakes makes them lighter and creamier. Yum!

The Best Rolled Sugar Cookies

These turned out great! I added some cinnamon and cooked them for 8 minutes. If they start to turn brown around the edges take them out right away! The ones that hadn't turned brown stayed softer in the middle.

Pumpkin Turkey Chili

This was good but I had to keep adding spices to it because it was bland. I also added black beans and corn to it. It came out really thick and I wish I had either bought an extra can of tomatoes or some chicken broth. I didn't have either so I added some of the juice from a jar of jalapenos.

Butternut and Apple Harvest Soup

Everyone loved this soup! We modified the directions a little because of the ingredients we had around the house and it still turned out wonderful. We used canned yams instead of the potato and already had cooked butternut squash from another recipe. We added these veggies for the last 5 minutes of simmering since they had already been cooked. After blending we added nutmeg, cinnamon, and curry. We didn't have cream and planned on adding milk instead, but after tasting we decided it didn't need anything else! I think next time I will add more apple to see if I can make the apple flavor stronger.

Orange Chocolate Swirl Cheesecake

I was skeptical on the orange chocolate combo because I usually prefer more berry flavors, but this turned out excellent!We used 2 table spoons of fresh squeezed orange juice and added coco to the crust. We also cooked the cheesecake in the waterbath like suggested and it came out smooth and creamy without cracks. We topped with the chocolate shavings and candied oranges. If I make it again, the only thing I would change is that I would take only separate 1 cup or 1 1/2 cups to mix with the chocolate because there seemed to be a lot more of the chocolate than the plain. And that way the chocolate swirls would be even more chocolaty!

Pumpkin Bread IV

I've made this twice. The first time it was the hit of our Christmas dinner! My boyfriend begged me to make it again! I followed the directions except I substituted pumpkin spice for the cinnamon, nutmeg and cloves. The second time I made it... I have to admit, I messed up. I didn't have the pumpkin spice and I only had cinnamon and cloves. So I made it without the nutmeg and forgot the salt! It wasn't as good... everyone could tell something was missing. I also used half oil and half apple sauce to make it a bit healthier. I'm not sure if it affected the taste also, but it definitely didn't affect the moisture, because it was still nice and moist.

Mom's Zucchini Bread

This bread turned out great! I made muffins instead of loafs because I didn't have a bread pan. The only changes I made where to use half unsweetened apple sauce, half canola oil and I added chocolate chips to half the muffins. I think next time I will add more zucchini than the recipe calls for like some others suggested.

Banana Peanut Butter Bread

The bread was good but no one could even tell there was peanut butter in it. I also took it out of the oven 10 minutes early and it was still at little over cooked. Next time I would add more peanut butter, and check it after 50 minutes.
