Old Fashioned Mac and Cheese

This is my families absolute favorite Mac & Cheese. My hubby is in charge of making this and there are never any leftovers. Tonight he has added seasoned ground beef and bacon to it so it is our entire dinner along with tossed salad and homemade dressing. I am sure it will be just as delicious with the additions.

Bow Tie Pasta with Sausage and Sweet Peppers

Loved this recipe. Only addition I made was some garlic and a little parmesan cheese on individual servings. My kids and hubby went back for seconds. Simple and deliciious!

Pad Thai

My hubby made this tonight. We tripled the sauce per the reviews and we didn't have any bean sprouts. We also used quick cook chinese noodles instead of rice noodles and put organic natural peanut butter in the sauce because we had no peanuts. We loved it. I am sure there are more complex pad thai recipes out there but this one was fairly simple and very delicious.

Southern-Style Barbecue Sauce

I used low sugar ketchup to make this even more low carb and I added a little dijon mustard. It is awesome. I used liquid sucralose because it is what I had, so it was a little thin, but it tastes amazing. I might try cooking it down one day when I have more time. It is a great recipe.

Different Chicken Divan

This was awesome! My whole family loved it. Only change I made was garlic powder instead of garlic salt and because I had leftover rice and it's not great reheated, I put it under the chicken and broccoli. It was fantastic!

Banana Cake VI

Made this cake today. My family loved it! It wasn't too sweet and had yummy banana flavor. I followed the directions exactly and my only difference was I had to bake it longer than an hour, but it was well worth it.

Zeppole

I had these at a wonderful bakery in Seattle and my oldest child was not with us so I looked for a recipe and ended up here. All I can say is FABULOUS! I even substituted sugar-free honey and splenda in the recipe and they were awesome. Next time I am going to try making them with Coconut Flour for even less carbs. Great recipe!

Artichoke Chicken

I have been making this dish for over 6 years now, ever since I got it out of Quick Cooking Magazine. I have had to share this recipe at least a dozen times, everyone loves this dish. The only changes I have made are I cut the chicken up in large chunks instead of using whole pieces. This served over rice is AMAZING! Some of the reviewers on here made so many changes it wasn't even the same dish anymore. Glad they had success but honestly.. they shouldn't rate THIS dish based on their own little creation. Thank you Lisa for submitting this awesome recipe. It has never ever failed me.

Creme Fraiche Chicken

I made this dish with 2 changes. I used boneless skinless thighs and I used cooking sherry because the store was out of white cooking wine and I didnt think to just go buy a bottle of white wine and I had cooking sherry at home already. It was AWESOME! My family devoured it and they fought over the leftovers. Will make again definately.

Cajun Baked Catfish

I am on a special diet and I have to say this is the BEST baked fish I have ever ever eaten! I had to make a couple of small adjustments due to what I had on hand and what my diet allows. I used MCT oil instead of the canola, I used smoked paprika instead of regular and I used granulated garlic instead of garlic salt. This was FABULOUS!! I can't wait to make this for my oldest son who loves fish too. I am also going to try it on chicken. I bet it will be great! Thank you for an amazing recipe!!

Fish Chowder

Just made this tonight and its a total hit. My kids are devouring it (and one of them hates fish!!) I omitted the shrooms because I didn't have any but I added carrots. I also had no clam juice so I used additional chicken stock and I used flounder because it was on sale for $1.99 a lb. It is awesome!! I will be making this again!! Oh yeah.. if you have a Whole Foods around they carry a seafood seasoning that is called New Orleans Seafood seasoning w/ Tabasco (its a powder and it tastes like Old Bay with extra heat) and I added some of that to give it a little kick but still used about a tsp and 1/2 of Old Bay too. Was so so good.

This was AWESOME!!! Only change I made was used a can of stewed tomatoes instead of the tomato sauce. Everyone in my family ate 2 bowls! Its a keeper!

Sesame Beef

This was awesome.. my family was begging for more and I even doubled the recipe and served over leftover rice. Simple and easy!! One thing I changed was that I used Splenda instead of sugar because it was all I had. I don't think it made a difference at all.. except in cals/carbs. Will make this again and again! Better than take-out!

Scalloped Potatoes and Onions

I made this tonight in the crockpot w/ some ham on top and it made into a soup and it was DELICIOUS!!!!! I have no idea how I messed it up but it was certainly a yummy yummy mistake!

Rice Cereal Energy Bars

Just made my second batch of these. First batch didn't have chocolate chips in them and I added coconut and some various dried fruits I had on hand. Those were a huge hit! This time I added the chocolate chips and notice that they melted the second the warm peanut butter goo hit them so these will definately taste different. I bulked this recipe up with pumpkin seeds, walnuts, coconut, some left over chowmein noodles (just to get rid of them) and some dried mango and dried banana. I also left out the white sugar and used half corn syrup and half sugar free maple syrup and I used organic crunchy peanut butter and soy protein powder in place of the powdered milk. I sampled a clump before I pressed it in the pan and it was tasty so I am pretty sure the bars will also be really good.

No Bake Peanut Butter Pie

This is the second time I have made this and the first time was amazing. They are in the freezer now so I will have to chime in later to give the results because I used splenda instead of sugar in this batch. I also used one chocolate crust and one graham cracker crust and neufchatel cheese instead of reg cream cheese. My kids said the beaters were amazing so we shall see!! Taking them to an end of summer bbq tonight.

Skillet Pork Chops with Potatoes and Onion

If I could give this recipe more than 5 stars I would! I found this tonight because I had pork chops thawed and I wasn't too excited about cooking them. My husband actually made this dish after I found the recipe and man oh man was this awesome! He followed the directions exactly except he used frozen diced red potatoes and it was just fabulous!
