Lentil and Sausage Soup

This was a big hit when I made it-- fed me and my boyfriend AND the neighbors for days, and still had leftovers to freeze! Didn't have chicken broth, so I used a chicken stock/cream of chicken combo and it still turned out great. Will definitely make again, as it was pretty easy and the results were well-received and plentiful. Yum!

Blueberry Muffins II

Delicious! These turned out brilliantly for my first-ever batch of homemade muffins. Added a generous dash of cinnamon and a splash more milk to the batter, and I didn't quite use all of the flour. Also, I used baking cups so I didn't have any issues with them sticking to the pan. Wasn't sure exactly how much to put in each cup, but I filled them almost to the top and they turned out perfectly. Thanks! Will definitely make again.

Braised Balsamic Chicken

Very flavorful, and super easy to make--with ingredients I already had on hand! I used chicken tenderloins and tossed in some mushrooms while I was cooking the chicken and onions, and used a minced clove of garlic instead of garlic salt (will use more next time). Served with baked asparagus topped with the extra juice. The boyfriend and I vacuumed this up! Will definitely make again soon.

Broiled Tilapia Parmesan

One of the very first "real" recipes I ever made, and it turned our delicious! Now I make it fairly regularly, and it always gets a great reception. At the suggestions of other reviewers, I added bread crumbs to the mix and used low fact mayo and less butter, but I usually end up adding some milk to thin it out a little. A great dish, and super easy to put together with that's in your kitchen!
