Authentic French Meringues

Made for a birthday party, in three color - flavor combinations: green mint, yellow lemon, and white vanilla. I had 5 egg whites, so I adjusted the rest of the ingredients accordingly. Prepared the recipe then divided it and colored and flavored it. Piped the cookies with a star tip into 1.5" to 2" cookies on parchment. Made about 100 cookies. Green and yellow did not pipe as well, no doubt due to additional liquid from the flavoring. Not sure how to fix that but may add additional sugar to batches I intend to color / flavor. The few leftovers stored well in airtight container at room temperature for several weeks - until I remembered they were there. Then gone! :-)

Hawaiian Banana Nut Bread

This is a moist and delicious bread. Have made several times. The only changes I have made are to use glacé cherries instead of maraschino, and to cut the oil to 2/3 cup and add 1/3 cup applesauce. May be able to cut oil more and add more applesauce. Made with 2x the pineapple once. Loaf was very moist and a bit crusty. Might try 1.5x the pineapple and see how that goes. But very very yummy and always a hit.

Macadamia Nut Chocolate Chip Cookies

Made these for a Hawaiian themed shower. Used chopped white chocolate instead of chips. Used salted nuts and left out the salt. These cookies had a caramelly flavor that was delicious. Definitely a hit. Next time, will try with some dried cranberries in place of some or all of the nuts. Will definitely make again.

The Best Rolled Sugar Cookies

I make these for every occasion: Christmas, baby showers, wedding anniversaries, birthdays, and on and on. Always a hit, especially iced with sugar cookie icing (this site). Makes a delicious and durable cookie that is easy to work with and to transport.

Christmas Fruitcake

I have been making this fruitcake for the past several years. Everyone loves it! Best after several weeks. Any mix of dried fruit is good. Cut the butter to a scant half cup (about 3/8 cup) as I found that the butter came out of the cake during baking. Very rummy. Keeps well for many weeks but only if you hide it and forget about it. Yum!

Apple Spice Cake

Excellent recipe. Big hit at work. Made a few small changes: added 1/2 cup unsweetened applesauce and cut butter to 2/3 cup; replaced 1 cup of the sugar with 3/4 cup brown sugar; cut allspice to 1/2 tsp and added a pinch of cloves; grated the apples in the food pro; made in 9x13 pan and baked 40 minutes; iced with maple cream cheese frosting. Great!
