Bread Pudding III

I used two large french rolls for my bread, other than that, I didn't stray from the recipe. I haven't ever made bread pudding or eaten that much for that matter, but I can testify to the awesomeness of this recipe! SOOOOO delicious. ** I did use two cans of evap (almost exactly three cups) and had to cook for much longer. Close to an hour.

Vegetable Pizza Squares

This was really good! Unfortunately my power was out due to a snowstorm (I live it Alaska) so I had to try to make the sauce from memory and I screwed it up. I only put 1/3 cup of mayo and boy was this rich! Still very good though. I am sure it would have been perfect if done correctly.

Luscious Four-Layer PHILLY Pumpkin Cake

This is delicious! I made it for a friend's birthday and I"m making another one for my borther in law's birthday today. My husband demanded I Nix the chocolate cake I had planned and make this one again. I did double the recipe and I'm glad I did because the bottom of one the cakes stuck. Make sure to grease AND flour your pans.

Whole Wheat Beer Bread

Salmon Chowder

I live in Alaska and as part of a commercial fishing family I have had salmon every way known to man. This recipe has become a favorite for my family. It is excellent every time I make it and stands up well to any emergency adjustments one might have to make. I never use the dill or the cheddar and always add a a half cap of liquid smoke. All around excellent recipe.

Banana Cupcakes

These are unbelievably delicious! I was skeptical of banana cupcakes but I am now a believer! I handed one to my two year old, walked over to get myself one and by the time I got back to him he was holding an empty wrapper yelling "MORE!" The only thing I may have done differently is to use three large bananas rather than one cup.

Streusel Rhubarb Bread

This recipe is fantastic. I usually alter recipes but I made this exactly as written and I am glad that I did. It is extremely moist and flavorful. I intend to try this with apples this winter when I run out of rhubarb. As my friend put it "This is just an all around awesome dessert bread!"

Garlic Chicken

This recipe is awesome. I ended up marinating the chicken in a light caesar vinaigrette for about two hours, in an effort to lower the fat content, and I used italian bread crumbs. My family, including my two year old, loved it.

Blueberry Streusel Muffins

The were so good. The only thing I did differently was to squeeze the juice from half a lemon into the batter and zest a little of the peel into it as well. I also added enough splenda to the sugar to make 1/2 cup which probably wasn't even necessary. I plan to try without the added sweetener next time. Make these muffins!

Carrot Cake

The cake itself was AWESOME. I, personally, did not care for the icing. It was a little thick for me. I would have preferred a lighter frosting. Having said that; everyone else who tried the cake raved about it. I brought it to work thinking I would be bringing some home and it was gone within a half hour.

Craving Cookies

EXCELLENT base recipe. I did make a couple of changes. I used 3 over ripe bananas, substituted splenda for the white sugarand used old fashioned oats for 1/3 cup of the flour. Also used two heaping 1/4cup fulls of chunky, natural peanut butter. I could not keep my two year old out of these.

Chocolate Crinkles III

Just like mom used to make! I used a tablespoon to measure the dough and baked for exavtly twelve minutes. They were still a bit fudgy in the middle but I think that's how they're best!

McCormick® Gingerbread Men Cookies

When I first baked these cookies I did not like them. I thought that they were very bland. Because I could not decide what to do with them, I wrapped them up and stuck them in my freezer. I took a couple out last night and WOW are they good. The flavors all came out and they are excellent. Also they seemed to be softer after freeezing. I am so happy that I didn't throw them away!

Red Velvet Cake III

This was excellent. The only change I made was to use 4 tablespoons of Cocoa and I am glad that did. The cake had the perfect chocolate flavor and was a big hit with everyone at my sons birthday party. My father in law ate three pieces! A did use the frosting recipe given and it was awsome.

Cream of Pumpkin Soup

This ia an awsome soup. I did make a couple of small changes. I doubled all of the spices except for the salt, added 1/4 tsp. Cayanne pepper and two tablespoons brown sugar. I also used 2% evap rather than heavy cream. So good. I didn't make the croutons.

New England Blueberry Coffee Cake

This was very good. I did put the cake in the oven for 7 minutes before I added the topping. After adding the topping I baked the cake for 20 more minutes after which the topping was DONE so covered the whole cake with foil and baked for 10 more minutes and removed from the oven. The cake was nearly perfect after that. I ended up cutting about an inch off of the whole perimeter of the cake (and throwing it away due to it being a little over done) and then removed the entire cake from pan and placed on a nice serving platter. Delicous.
