Creamy Au Gratin Potatoes

I don't know what I can add to over 3,000 reviews, but these were wonderful, and I will certainly make them again. I halved the recipe because it is just two of us now. I was thinking the onion might be too much, but it really just kind of melted into everything and really added to the flavor. I can't improve on this recipe, but I can see where some people added more cheese, etc. I will stick to the original recipe because it is absolutely delicious as is.

Calico Bean Casserole

This was a perfect simple dinner for a rainy, cool day. Delicious comfort food, is what I would call it. Made according to directions and it was perfect. I didn't find it too sweet.

Dark Rye Bread

Fantastic recipe. I was very happy that I got a nice rise, which can be very hard when using rye or whole wheat flour. The second time I made it, I added chopped fresh dill and a tsp. of minced garlic. Wonderful. Thanks so much for posting this recipe.

Boiled Bagels

Made this recipe as written. The bagels turned out well, however I am wondering why no one else mentioned the amount of water given in the recipe. I had to use 2 cups of water, as the dough did not come together at all with the 1 1/2 cups. It was humid and actually a rainy day when I made these, so I don't think it was the atmosphere. Anyway, they turned out fine after adding the extra water, so all is well. Will make again.

Salisbury Steak

I had a severe attack of gout and have had to adapt a number of great recipes from AR. If you are prone to gout, broths and soups made with beef or chicken broth are one of the worst things you can eat. I was so hungry for this Salisbury Steak that I had to find something to sub for the canned onion soup. So I caramelized two very large yellow onions, which made a little over a cup, then I put them in a small saucepan with about a cup and a half of vegetable broth and gently warmed that and let it cool. I then followed the recipe as written, except using my homemade onion soup concentrate in place of the canned. It turned out fabulous and tasted exactly the same: Delicious.

Microwave Oven Peanut Brittle

Oh, gosh, this stuff is dangerous! I have a 1000 watt microwave, so I fiddled around with the time the first time I made this, and I didn't think there was a lot of taste to it, but I had to try it again. The second time, I followed MARIEZEE's review hints, plus added a bit more salt, and it is perfect and just too delicious! It is in the pantry calling my name right now! Can't believe it was so easy. Thanks, Linda C for the recipe, and MARIEZEE for the tips on how to make it with my microwave power.

Copycat Panera® Broccoli Cheddar Soup

Absolutely fantastic soup. I have made it twice in two weeks. First time I used store-bought vegetable stock instead of chicken stock, and also used pre-shredded cheese. Second time I used my home-made veggie stock and noticed no big difference, but I also grated the cheese off a block, and that made a difference in the texture of the soup, especially as it cools off. With the pre-grated cheese, the soup can get a bit grainy and stick to the spoon. With hand-grated, that was not a problem at all. So if you have the time, grate the cheese off of a block. I loved this recipe and will make it often and to serve to guests. Thanks for a great recipe.

Keni's Pepperjack Cheese Dip

Very good; thick; has a little kick to it, but not real hot. Spreads nicely when cold, but let it come to room temp for a dip consistency. I posted this recipe in memory of Keni.

Brownie In a Mug

I don't know why the recipe says to use olive oil, but I followed directions and the brownie had a strong olive oil taste, and I couldn't eat more than two bites of it. I might try it again with veg or canola oil, but can only give it 3 points using the original recipe. Perhaps some people won't be sensitive to the olive oil flavor, but to me, it doesn't "go" with chocolate flavor.

Asian Pork Tenderloin

Family loved this. I usually use another recipe for pork tenderloin that uses a dry rub, but tried this, and everyone loved it. I used 2 One-pound tenderloins from Costco, and cooked it at 325 for an hour. Was very moist, tender and delicious. Pretty easy, too. I mixed the marinade and marinated all in a gallon zip plastic bag to cut down on washing up.

A very "tried and true" salsa recipe, given to me by a friend almost 30 years ago, that is easy and has few ingredients. Try it with the least amount of hot sauce the first time you make it, you can always add more.
