Grilled Tofu Skewers with Sriracha Sauce
This recipe rocks! I have to say that I did something unusual with the veges, tofu and sauce from the original recipe. I saw this and thought it looked great but for one, I didn't have any kabob sticks and besides, it was pouring outside so I turned this into a stir fry! It was great! The only thing I did was double the sauce as I made rice to go with it. It was delish and great as is - I made no other changes. Try this recipe either way, you'll love it!

Irish Soda Bread
I just made a loaf of this bread and we all love it. I made it as the recipe was written with one exception. Instead of 3 cups of raisins, I added only 2 cups and we are very happy with that amount. I cannot imagine what it would be like with all three cups! Other than that, it is a delicious quick bread that is easy to make and quick to enjoy!

Healthy Banana Cookies
We really liked this cookie. I did substitute walnut oil for the vegetable oil and I also added 2/3 cup ground flax and an additional 1/3 cup oatmeal. With these changes my cookies ended up crispy on the bottom and soft and chewy in the middle; the way we like them. If you like a real crispy cookie, I wouldn't add the additional ingredients the way I did. My cookies only took about 15 minutes to bake. I'm thinking next time I may bake them as bars instead of cookies. I really like this recipe as it is so flexible and easy to change to your family's likes and dislikes. BUT, again, these are a healthy cookie so don't expect anything real sweet. Thank you for sharing, K, I'll be making these often!
