Roasted Beets with Feta

This is the most delicious recipe for beets I've ever tasted. I was a little skeptical, but the combination of flavors was really amazing. No modifications needed...try this recipe :)

Cranberry Orange Loaf

Nice texture and decent flavor. I left out the nuts and baked in 8 mini loaf pans for about 27-29 minutes. They have a really nice texture and the fresh cranberries tasted delicious. Just make sure to leave the cranberries whole, otherwise they get the flour mixture stuck inside, making them look a little ugly.

Easy Chicken Tetrazzini

This was a really simple and tasty way to use some turkey leftovers. I also added in some sauteed shallots to give it a bit more taste & some cooked broccoli so we could get our veggies in. Overall, I think it could have used a bit more flavor depth, but it was pretty good considering how simple it threw together. And my son (the picky eater)loved it, so that makes it a winner for sure.

Cranberry Apple Pie

The flavor of this pie was top notch. However, don't plan on eating this pie warm....it is extremely runny. You will need to refrigerate it until it sets up, but dont let that deter you...its really excellent.

Apple Pie by Grandma Ople

This is hands down THE BEST apple pie recipe I've ever made. The only change I made was to toss the apples with a tsp of cinnamon first. The glaze on top gets deliciously carmelized and it gives it a buttery sweet taste like liquid pralines.....MMMMM!!! Make this pie...you won't be sorry!

Caribbean-Spiced Roast Chicken

This was OK as far as roast chickens go. I guess I was just expecting much more flavor & what I got was a plain roasted chicken with a spicy skin. And if you dont eat the skin, all you'll get is a plain roasted chicken. I wouldn't make it again.

Lentil Stew

Really good recipe and defintely better the next day. The only change I made was to add an additional can of tomato sauce & some Italian seasoning, just to give it a bit more flavor. My son is a picky eater and he loved it. My husband wasnt fond of the lentils (there are quite a lot) so when I make it again, I would probably do half as many lentils & maybe add some carrots. Thanks for the delicious recipe :)

Caribbean Coconut Chicken

When cooking with coconut milk, you have to keep in mind that the longer it cooks, it will loose flavor and become greasy. So I used to coconut milk as I would when preparing a Thai curry...use half to start and add the last half at right before its done. That being said, the recipe was still a little bit bland for me. Based on other suggestions, I ended up adding some lime juice and cilantro to punch it up a little. That made the flavors a but more complex, but I was still hoping for something more.
