Quick and Easy Home Fries

Reviewed: Feb. 19, 2012
Pretty good basic recipe, followed pretty much as written except didn't use russet but 'white premium'. I used a non-stick pan, about 1.5 tbsp butter (stick measurement) since I was too lazy to try to measure out the scaled down amounts. For my one & half potato took about 7 mins uncovered since I cut them down to small bite sized cubes & didn't want to burn them. They came out basically really crisp brown on one side yet cooked soft on the inside - like diners. Yes, quick and easy home fries. I ate it all with ketchup on the side as if dining out....will be trying other variations as others have mentioned. A keeper!

Bratwurst Potato Skillet

Reviewed: Jan. 24, 2012
Even with the improvisions I had made to it, surprisingly pretty good flavor. I used a canola/olive oil blend since didn't have vegetable oil, used regular white potato & left out green peppers since I didn't have any. I wasn't sure about the combination of soy sauce & orange juice so I used half of soy sauce & squeezed the juice of half a clementine....tasted it & it was weird flavor. Figured I'll just toss it in there anyhow & see what happens since this was just for me to eat. It actually enhanced the flavor in my opinion. I would make this again even with the improvisions & I'm sure the orig would be pretty good. I found that my cooking time was much longer but probably due to the fact that I used a non-stick pan instead of skillet. I didn't rate it 5 because I didn't actually make the original version. This is a keeper for me.

Spinach Combo

Reviewed: Oct. 19, 2011
I chose this to use up my spinach and rice. I decided to try chicken broth instead of water and used red onion and left out tomatoes since I didn't have any on hand. I forgot to add salt & pepper but to me I can do without it. The flavor is good. I would make this again and perhaps try it with tomatoes from orig version. Thanks!
