Mexican Casserole
My guy loved this and I thought it was good as well. We were snowed in so I used what we had. Browned ground beef with the Taco Seasoning I recipe off All Recipes, subsituted Rotel tomatoes and added a can of olives. We used flour tortillas and as recommended by prior reviewers put some of the mixture on the bottom of the pan. If we had used regular diced tomatoes and you like some heat, I'd suggest adding jalapenos.
