Apple Cake III

I thought that the original recipe is really good, but with my slight alterations, it made it a FIVE: In addition to putting cinammon and apple pie spice in the batter itself I also added about 1 cup of apple sauce (no added sugar kind) for extra moistness. Then, I made a blend of cinnamon, apple pie spice, and pecans (instead of walnuts) and set aside. Once I poured half of the batter into a bundt pan, I sprinkled the cinnamon/pecan mixture over the batter, then poured the rest of the batter over it. Once the cake was done and cooled, I flipped it out and dusted with powdered sugar. The result was a DELICIOUSLY most cake with a sweet/cinnamon/pecan swirl in the center!! Next time, I will likely use more apple pie filling, probably about 1/2 a can more.

Banana Sour Cream Bread

Best Banana Bread. Ever. My husband said it was the same caliber as his grandmother's (or better). I made some slight changes to lower the calories a bit (although it did not taste "healthy" at all, if you know what I mean). 1) I used 1/2 WW flour and 1/2 all purpose. 2) Used about 1 cup less sugar 3) 1/2 butter & 1/2 Margarine 4)More cinnamon than called for and 5) threw in choco chips/walnuts. AWESOME!

Easy, Cheesy Zucchini Bake

This is a good, base recipe. To make it 5 stars: Cook turkey with onions, add garlic, pepper, paprika and oregano. Then, add about 1/2 of the spaghetti sauce until well heated. Then, pour mix onto the zucchini. I topped with black beans (no corn) and a few dices of jalapeno...Topped with cheddar and it was much better!

Red Pepper-Salmon Pasta

Great recipe...I was a little skeptical as I was making it, as it didnt taste like much on its own. However, once it thickened and was tossed with pasta and Salmon, it was AWESOME. I tweaked it a bit for our taste, such as adding a bit of salt and pepper, and a bit more garlic. NOTICE: The recipe makes enough sauce to barely cover salmon and lightly coat the pasta. If you like extra sauce, double the recipe! Im going to try to make a large batch and see if it will freeze well...

California Grilled Veggie Sandwich

This was delicious! I followed the recipe exactly, except I used french bread (all I had) and roasted the veggies in the oven (instead of grilling)after tossing with a little olive oil. Turned out great!

Shrimp and Okra Gumbo

This was great. I personally am not an okra fan, but my husband is and was begging for some gumbo. I decided to make this recipe and was pleasantly surprised. I followed the recipe, except I used zucchini instead of celery, since it was all I had. I also used about 3 cups of water and 3 cups of chicken broth (6 cups total, not 12!) I served with a little brown rice and butter biscuits! A+ !!

Easy Roasted Pork

I dont know why, but this did not turn out as great as I expected it...I lightly browned it and placed in aluminum foil, but other than that I followed the recipe exactly. It was tougher than we like and lacked a little flavor (other than sweet). While I think the ingredients were great, I think the cooking method was probably not ideal, especially since my roast was a bit larger. Next time, I plan to do this in the slow cooker instead, that way the flavors meld better and the meat is more tender.

Award Winning Soft Chocolate Chip Cookies

I scaled back this recipe to 1 dozen, but did not change any of the ingredients...I thought these were "OK"...The texture turned out to be cake-like, and if that's your preference, then use this recipe! However, I also felt it lacked something.. I really prefer choco chip cookies to be chewy, w/ slightly crisp edges, and with a more complex, rich flavor...

Fluffy Pancakes

These were great! I modified it just a bit to suit our tastes: Used 1/2 all purpose and 1/2 w.w. flour and sprinkled in cinnamon and ground flaxseed...I made a batch with bananas and pecans and ate them with clover honey...My husband said they were the BEST pancakes he EVER had!

Banana Nut Muffins

Delicious. I followed the directions exactly, except I added some cinammon, and used 1/2 cup of applesauce and 1/2 of the vegetable oil called for. I also added a handful of chocolate chips (cant help it, I love bananas and chocolate!). Once the muffins were done, I let them cool until I could handle them and placed them in an air-tight container. They have remained moist and tasty, and I will likely make these again. Next time, I may try 1/2 ww flour and 1/2 white.

Creamy Hot Cocoa

Wow..Didn't seem like anything special at first, but my husband was licking the rim of his mug and asking for more! I followed the other recommendations and lowered the sugar and it was still on the sweet side...Keep this in mind, especially if you plan on adding marshmallows of whipped topping! YUM!

Downeast Maine Pumpkin Bread

Ive made this recipe a few times now, and never rated it. Its absolutely moist, delicious, and moist! Definetely even better the next day. Make sure you dont cover too tightly though...Allow it some breathing room. (I lightly wrap mine in foil and keep inside microwave or on counter). Otherwise, it will turn into a dense,pumpkin log!

Zucchini Cornbread Casserole

Great Recipe! Defintely "sweat out" the zucchini a bit by adding some salt and letting it sit in a colander. Then, squeeze out the excess with a paper towel. Dont worry if you dont get every ounce of fluid out...just reduce the amount of liquid(usually milk or water) in your corn muffin mix recipe a bit. I followed the recipe except I added some diced jalapeno and did not top with cheese (only on the inside). Turned out great and disappeared quickly.

Baked Scallops

Excellent, simple recipe. Followed recipe exactly, except I dredged the scallops in butter and then the bread crumbs (i used Panko). Served with WW penne pasta and a side salad. :)

The Best Lemon Bars

These were perfect! I had never made lemon bars before, but was having a mad craving for some...so I tried this recipe. I made exactly as stated, except I only had an 8x8 pan, but it didnt affect the taste or texture at al. Great recipe! :)

Pear and Prosciutto Pizza

Deliciously Unique! I made this on Garlic Naan instead of pizza dough, added some Basil/Tomato Feta, and (accidentally) omitted the Swiss Cheese, and it still turned out great!

Lamb Tagine

Amazing recipe! I used all the ingredients, with the exception of the pinch of saffron, as I didnt have any, and neither did the grocery store.:( But it still turned out absolutely delicious. I made the following slight changes: Threw everything in the slow cooker and set on low for about 10 hours, tossed in some fresh basil and a dash of red wine towards the end of the cooking process, and used a bit of "Wondra" flour instead of cornstarch to thicken it up a bit. I also threw some diced potatoes along with the lamb and everything turned out beautifully. Served it with Curried Brown rice.AWESOME!

Moroccan Lentil Soup

I made this recipe with a few slight alterations/substitutions, and it turned out great...I didnt have garbanzo beans on hand, so I used Navy beans. I also did not have canellini beans, so those were just omitted. Also, instead of all water, I substituted some with chicken broth. Other than that, I followed the recipe. I found that the lentils were ready in about 45 minutes over medium-low heat, and felt that it didnt need to be blended at all. BTW- Dont spend big $$ on buying cardamom unless you plan on using it a lot. (This spice is usually already found in Garam Masala.) I will likely try this again, but with some nice Naan bread! :)

Slow Cooker Salisbury Steak

Great Recipe! Easy, no-fuss dinner. All I had was condensed Golden Mushroom soup, so I used that instead of the cream of chicken. Also, I had no au jus mix, so I put a few dashes of Worcestishire Sauce, onion powder and diced onions/mushroms. Served with mashed potatoes and peas/carrots. Turn out great. Hubby and baby ate it all! :-)
