Cooking/baking with seasonal fruits and vegetables, and I'm always looking for a new recipe to try. :)
My favorite family cooking traditions
My family has always frowned upon prepackaged/frozen meals. I was raised to view cooking meals / baking treats from scratch as a sign of love towards those you make it for. I've tried my best to incorporate that in most of my favorite meals, and its been lots of fun keeping that tradition.
My cooking triumphs
Ratatouille: I had never heard of it until I saw the movie....So I decided to make it and it was delicious!!!
My cooking tragedies
I've had a few...Most recent one was zuchinni muffins...They looked and smelled delicious, but I may have accidentally doubled the salt. YUCK! I'll have to re-try. :)

Doubletree Hotel's Cookies
I think these dont taste EXACTLY like to Double Tree Cookies, but they are still very delicious! I've made these twice so far. The 1st time I followed the recipe exactly and they were excellent, but a little on the thin side. The second time I made changes based on recommendations by reviewer CSANDST1. They turned out perfect consistency-wise, but the taste was a little better per recipe. Either way, you get a delicious cookie and I'll be making these for a long time! :-)

Shrimp and Okra Gumbo
This was great. I personally am not an okra fan, but my husband is and was begging for some gumbo. I decided to make this recipe and was pleasantly surprised. I followed the recipe, except I used zucchini instead of celery, since it was all I had. I also used about 3 cups of water and 3 cups of chicken broth (6 cups total, not 12!) I served with a little brown rice and butter biscuits! A+ !!

Zucchini Cornbread Casserole
Great Recipe! Defintely "sweat out" the zucchini a bit by adding some salt and letting it sit in a colander. Then, squeeze out the excess with a paper towel. Dont worry if you dont get every ounce of fluid out...just reduce the amount of liquid(usually milk or water) in your corn muffin mix recipe a bit. I followed the recipe except I added some diced jalapeno and did not top with cheese (only on the inside). Turned out great and disappeared quickly.
