Zesty Slow Cooker Chicken Barbecue

I made this exactly as the recipe stated, except used a whole bag (2 lbs?) of frozen chicken breasts which equalled about 8 breasts. I used the Serving Calculator on the site to alter the ingredient amounts. I love that feature! I defrosted the chicken first, then added the chicken and sauce in my crockpot and refrigerated it over night. I cooked it on high for 4 hours, then removed the chicken and all the sauce into a separate bowl. After shredding the chicken, I added it back to the crock pot with about half the sauce and cooked it on low for another 2 hours. The remaining sauce I served on the side for those who wanted more. It was very easy and very tasty!

Bill's Sausage Gravy

Perfect, simple gravy. Even a beginner couldnt mess this up. 3C of milk is perfect. It thickened up to the right consistency, and I didnt have to keep thining it out. I used 2% milk, sage sausage and lots of salt and pepper.

Chicken and Corn Chili

I made this recipe exactly as stated and it turned out great. I did not drain the liquid from the corn or beans and the consistency was perfect. However, there was a lot of chicken so I think you could easily get away with 2 or 3 breasts instead of 4. I am looking forward to trying this with different salsa and bean combinations such as pineapple salsa with black beans. Yum!

Smokey Chipotle Meatloaf

This was very moist and flavorful. I didnt have celelry salt, so I substituted seasoned salt and added a couple tablespoons of milk to the egg mixture. It was not too spicy, in fact I was anticipating it to be more spicy than it was. The mild smokey flavor was just right. For those who like a bit more spice, I would reccomend adding an extra chipotle. I cant wait for the leftovers tonight!

Balsamic Pea Salad

this recipe had no flavor. the balsamic vinegar gave it a really unappetizing brown color. a bit expensive to make with the feta cheese and almonds. i threw the whole batch in the trash. very dissapointed.
