Luscious Spinach Artichoke Dip

I have been making this recipe for a few years now and friends always ask for the recipe. The only change I made was using creamed spinach instead of regular. However only certain stores carry it. Also, be sure to drain the spinach & artichoke hearts before using.

Excellent recipe! This has become a family favorite. The only thing I added was 1 tsp of grated lemon peel. Very smooth and creamy.

Low-Fat Blueberry Bran Muffins

These mffins were very good. I used Trader Joe's Bran Flakes and inadvertently used 1 tsp of vanilla instead of half. Very tasty!

Chicken Wild Rice Soup

This soup was delicious!!! However I did make some changes. I sauted the ingredients with butter, salt & pepper instead of the chicken bouillon before boiling. I used fresh garlic & parsley, used cream of chicken instead of cream of mushroom soup (as another used suggested) and added Uncle Ben's seasoned wild rice. My girls & husband loved it!!! Will definitely keep this recipe.

Banana Nut Bread I

Rick's Special Buttercream Frosting

OMG! This is the by far the best buttercream I''ve had in a long time. I have been looking for a good b/c frosting for so long. I did what other used recommended and used 1/2 crisco & 1/2 unsalted butter with 7 cups powdered sugar and it was soooo fluffy and delicious. It definitely tasted better the next day and it's also great for piping. I will definitely use this for all my cakes.....tastes just like the bakery. Yummy!
