Taffy Apple Salad

Reviewed: Dec. 25, 2014
Oh my. This is so delicious. I didn't have pineapple chunks so i decid to go ahead and try it with the crushed pineapple I did have. I drained it really well and carried on with the recipe. I wasn't sure about the peanuts but I did have some honey roasted peanuts so I decided to add half of what was called for. We liked the crunch the peanuts gave to the salad. When I make this again, and I will for sure make it again, I will used crushed pineapple again. You could eier use nuts or leave them out the salad would be great either way. Thanks for sharing this will be on my potluck rotation.

Three Packet Slow Cooker Roast

Reviewed: Dec. 22, 2014
I like how easy this is to prepare in the morning before heading out the door. I followed the recipe as written. The Italian dressing packet that I buy is 42 grams which is actually 1.4 ounces so use only 1/2 a packet. The ranch dressing is 28 grams which is 1 ounce so I can use 1 whole packet. Thanks for sharing such a good and easy recipe.

American-Style Creamy Greek Dressing

Reviewed: Dec. 22, 2014
This was really easy to put together. I used the blender and it came together nicely. Unfortunately we didn't like this dressing. I only put in about 1/2 the salt and seasonings and even at that it was too salty. Sorry I won't make this again.

White Chocolate and Cranberry Cookies

Reviewed: Nov. 7, 2014
I followed this recipe except for the brandy. I substituted 1 tsp vanilla instead. After I had started the cookies I discovered that I didn't have white chocolate chips but I did have lemon flavoured chocolate chips. Wow this was excellent. I baked them for 10 minutes at 375 which was just right. I love cookies that are a change from the choc chip, raisin cookie so thiis will go into my fav file. Thanks for the recipe.

Angel Chicken Pasta

Reviewed: Nov. 5, 2014
I like how easy this is to put together. I followed the sauce exactly but only had 3 chicken breasts. There was lots of sauce. In Canada our Italian dressing mix comes in 42 gram packages. For this recipe you need 1/2 of a package. Make sure to have the sauce quite hot before you add the cream cheese which you may want to cut into small pieces if you are using a brick. My cream cheese didn't quite get dissolved so there were chunks but it was still delicious. I think I'll try this in the slow cooker as others have suggested. Thanks for a yummy easy recipe.

Flavorful Chicken Fried Steaks with Gravy

Reviewed: Oct. 17, 2014
I really liked this recipe. It was so easy to put together and tasted really good. There was lots of gravy to put over mashed potatoes or pasta. I didn't have a package of chicken gravy but I had turkey. It still tasted good. I think this is versatile enough that you could use almost any combination of cream soup, can of gravy and package of gravy mix. I'll make sure to put chicken gravy mix on my grocery list and try it as written next time.

Chinese Cabbage Salad I

Reviewed: Oct. 12, 2014
I've tried a lot of Japanese ramen salads and pretty much like them all. It's my favourite salad. Up until know I thought the recipe I was using was good but WOW this one is out of this world delicious. I substituted almonds for the cashews because that is what I had on hand. I browned them in a pan on the stovetop. Oven was full. I followed the ingredients as written the only thing i did differently was I added 1 tbsp sesame oil the first time I made it and this time I didn't change a thing other than add the seasoning from the ramen noodles. I actually think it tasted better as written so that is how I will rate it not on my changes. I did however only use 1/2 of the dressing for the package of coleslaw I had. The package was a 397 gram (14 oz) and for our taste it was plenty juicy. Thanks for this recipe which keeps this my favourite salad.

Garden Fresh Tomato Soup

Reviewed: Oct. 4, 2014
I love this recipe. It is so easy to make. I have a few tomatoes left from the harvest and had to use them up so I thought I would give this a try. I cooked the tomatoes with garlic and onion and after the 20 minutes as directed I used my immersion blender. I put all of that blended concoction into a sieve and worked it until it no longer had any liquid left in it. I only had tiny tomatoes so there were a lot of seeds but if i had large tomatoes I don't think I would even put it through the sieve. I did the rest as directed. The only thing I would question is the 6 servings. We only got 2 large bowls out of this so I'm not sure how you would feed 6 with this amount. Maybe my liquid reduced too much as the tomatoes cooked. I did add some cream I had to get rid of but I don't think you need to add cream or milk. It would be delicious as is.

Slow Cooker Lemon Garlic Chicken II

Reviewed: Oct. 1, 2014
I used chicken thighs because that is what I had available. Delicious recipe and so easy to adapt for a lactose intolerant person in the house. The only thing I changed was to double the sauce. Not sorry I did that as it is delicious over top of spaghetti. This is such an easy recipe to make.

Blueberry Drop Cookies

I love these cookies. I was looking for something to use up an abundance of Saskatoon berries I had in the freezer so I used them in this recipe. Very nice for a change from chocolate chip cookies.

Balsamic Roasted Pork Loin

Reviewed: Aug. 27, 2014
Wow. This is a delicious roast that is so easy. I added about 2 tbsp of honey as someone else suggested. I really like to combination of balsamic vinegar and honey but I think this would be good without that addition. I marinaded this over night and when I put it into the pan to cook I threw in some potatoes and carrots cut up. I also poured all the marinade over top of everything and stirred the veggies so that they would be covered in marinade. The secret to a good pork loin is a meat thermometer. Cook it to 160* and let it rest a few minutes before slicing it.

Quick Asian Beef Noodle Soup

Reviewed: Aug. 1, 2014
This was a delicious and easy soup. I didn't have bok choy in the house so I used romaine lettuce. It worked well. I also added sesame oil instead of vegetable oil. I made this change as another reviewer suggested. Thanks for this recipe it was exactly what I was looking for.

Crispy Fried Chicken

Reviewed: Jul. 31, 2014
Delicious. I made this as written and it was excellent. The only thing I will do next time is start checking the temperature at 20 minutes. I cooked it for 30 minutes and it was quite a bit past 165*. I also didin't need to use 2 quarts of oil in my pan. I needed about 2 cups. We had a couple of pieces today and it was good even cold. Thanks I will make this again.

Blueberry Walnut Salad

Reviewed: Jul. 21, 2014
I was intrigued by the combination in this salad. We are big fans of feta cheese so that wasn't a stretch but the blueberries. Let me tell you this is a delicious combination. When I planned this I was sure I had a raspberry vinagrette in the fridge but I didn't so I had to use a pooppyseed dressing. It was delicious. I bought some raspberry vinagrette and tried again and it is just as delicious. I love this combination and I think it would taste good with almost any dressing. I've added a bit of orange pepper that had to be used up as well as some red onion and both are a good addition if you like lots of flavors in your salad. Thanks for sharing this it has become my new go to summer salad.

Cafeteria Macaroni and Cheese

Reviewed: Jul. 11, 2014
I used 2 cups uncooked macaroni which is 8 oz and it was the right amount. I also added the cheese to the hot milk after I had taken it off the heat just to melt everything together. I wanted to be sure that the cheese would be evenly distributed. This is a good mac and cheese recipe and we will use it again.
