Tonkatsu - Asian-Style Pork Chop

Reviewed: Nov. 12, 2012
The only reason I am giving this 4 rather than 5 stars is because I used a couple of the tweaks from other reviews. I dredged the pork chops in gluten free all purpose flour first. Instead of panko I used cornflake crumbs in order to keep the recipe gluten free and I added seasoning to each step of the dredging. This was fabulous. My family raved and pork chops are generally a hit or miss in my house. They came out super juicy and flavorful. Will use this recipe again!

Gravy Baked Pork Chops

Reviewed: May 21, 2012
This was delicious! I followed the recipe exactly, only exchanging the water for the gravy with additional milk. THe flavor was great, the meat was tender and OMG the gravy was heavenly! Will definately make again!

Blueberry and Raspberry Pancake Topping

Reviewed: May 9, 2012
This was awesome. I used a combination of blackberries and raspberries because that's what I had on hand. I also followed the advise of another reviewer and added 1 T. of lemon juice and 1 T. of cornstarch disolved in 2T. of water. The only thing that detracted was all of the seeds. Next time I will run the syrum through a strainer at the end. Definately will be making often!

Ham Cake-ettes

Reviewed: Apr. 25, 2012
These were awesome! I made 2 changes. I omitted the green onions because I didn't have any. Next time I will definately add them because it will only make it better. Due to gluten-intolerance I used corn flake crumbs rather than panko. These were perfectly seasoned and nicely crisp on the outside. The inside was smooth and had a wonderful texture. I will definately make these again soon! *note: I think next time I may try using left over cheesy mashed potatoes. I think those would taste great too!

Cinnamon Honey Butter

Reviewed: Feb. 29, 2012
I am giving this five stars for the ease of preparation and the taste. It was really easy and delicious. However, I used margarine. Don't. I highly recomend butter. With margarine it simply got runny rather than fluffy. I have a feeling using real butter will make all the difference.

Bacon Cheeseburger Rice

Reviewed: Jan. 10, 2012
I had high hopes for this recipe. Unfortunately I found it very bland and a little dry. Next time I will season it more, add mushrooms, real onions and maybe extra bbq sauce. Good start but needs work.

Meat Marinade

Reviewed: Dec. 7, 2011
I hate giving bad reviews but feel that this recipe calls for it. I followd the recipe to a T and used it on round steak. The marinade did nothing to tenderize the meat. On top of that the meat had a sour flavor. I will definately not be using this recipe again. Sorry.

Apple Pie Muffins

Reviewed: Dec. 6, 2011
I followed this recipe top the tee and feel it has wonderful potential. However, it definately needs more spices as it leaned towards the bland side. Also it baked in about 20 minutes rather than the 25 listed.

Zucchini-Chocolate Chip Muffins

Reviewed: Sep. 11, 2011
I made these exactly, except no nuts, and the flavor was really good. I only gave this 3 stars because the texture just wasn't pleasant. I think next time I will puree the zucchini in the hopes of a smoother texture.

Zucchini Brownies

Reviewed: Sep. 11, 2011
Soooo good. My "frosting" turned out to be more of a glaze but still so tasty. I highly recomend the topping though because mine did not look very appetizing without it!

Tasty Baked Meatballs

Reviewed: Aug. 15, 2011
The base recipe was good but i made the following changes. I used 2 lbs grd. bf and 1 lb sausage. Instead of onion soup mix, didnt have it, i used minced onion flakes. I used corn flake crumbs and gluten free mushroom soup. Will definately make again.

Cheesy Beef 'n' Rice

Reviewed: May 20, 2011
This was a really good recipe but I think the spices need to be tweaked a little. There was too much of something and not enough of something else!

Cheesy Italian Pull Apart Bread

Reviewed: May 19, 2011
This is a wonderful recipe with so many options! I made this recipe exactly as stated and it was awesome! I highly recommend you pay close attention to it as it bakes because store bought biscuits tend to overbake easily. I can't wait to play with fillings and toppings!

Lighter Banana Muffins

Reviewed: Apr. 20, 2011
This was delicious! I made the adjustments others recommended: I added an extra banana, cinnamon, applesauce, and vanilla. These were super banana flavored. I also substituted glueten free all purpose flour for the regular. AWESOME!

Peanut Butter Mini Muffins

Reviewed: Apr. 15, 2011
Made the recipe as stated. I have to say it needs to be tweaked. I would definately say you need to use either a very high quality peanut butter or a sweet peanut butter because these were very bland. Next time I may try adding cinnamon. They were a little dry which may be due to overmixing needed because of the peanut butter. They were like a cookie on the outside and a muffin on the inside. 15 minutes baked them perfectly. I got 38 mini muffins from this recipe.

Cinnamon Coffee Frosting

Reviewed: Apr. 11, 2011
I give this recipe two stars cause my dad loved it. I made it exactly as the recipe said. It was runny, gritty, and just tasted like really sugary butter. Not satisfied at all.

Cinnamon Bread I

Reviewed: Apr. 8, 2011
Nice and moist. Bake time was so on. However, next time I think I'll cut the salt in haf, double the cinnamon and maybe add some chocolate chips. Ok bread but kind of blah.

Strawberry Swirl Cake

Reviewed: Mar. 18, 2011
My dad wanted a "different" cake for his birthday. He gave me vague discription of a cake he had once. This sounded about right so I took a chance. This was it and he loved it! This cake is simple to make and the topping is delicious! I believe it could be done with a variety of fruit/jello combos. The only thing that stopped it from getting five stars was the fact that the cake itself was a little dry. I think I may try applesauce next time in the hopes of adding a little moisture. Overall, an excellent recipe!

Beef Pot Roast

Reviewed: Feb. 22, 2011
My family LOVED this. It was fairly easy to make. The roast turned out with a wonderful flavor and fairly tender. It was still a little tougher than I like. I am used to my crock pot where it falls apart. The gravy was yummy too. I will definately be using this recipe again.

Apple Pumpkin Muffins

Reviewed: Jan. 23, 2011
I would really rather rate these a three but due to my families reaction I won't. I made these this morning and ate one warm from the oven. I just reheated one and ate it with butter. I must say I like it better the second time. My entire family loved them. I thought they were ok but lacking something. The outsides were chewey while the insides were nice and moist. I feel the strusel topping didn't really do anything special. Next time I may adding a few mini-chocolate chips to the topping. See if that dresses them up a little. I would give this recipe a solid "ok".
