I am a busy working mother of 3.I always said I would never be a soccer mom but here I am, running to soccer games on Saturdays complete with the required mini-van! LOL! I love my family and friends and enjoy cooking new foods for them every chance I get.
My favorite things to cook
I love to bake almost anything. I like to try new things every chance I get. I have also been dubbed the family "casserole queen". My fiance is gluten intolerant so I am always looking for new gluten/wheat free recipes.
My favorite family cooking traditions
For any major holliday, Christmas, Easter, Thanksgiving, I always make blueberry muffins for breakfast, just like my mom did.
My cooking triumphs
I finally found a recipe for a gluten-free pineapple upside down cake. You can't tell the difference between it and regular!
My cooking tragedies
I have tried several new casseroles over the years. All though they normally go very well, there have been some that I was embarassed to serve my family. They're always good sports about it though.

Tonkatsu - Asian-Style Pork Chop
The only reason I am giving this 4 rather than 5 stars is because I used a couple of the tweaks from other reviews. I dredged the pork chops in gluten free all purpose flour first. Instead of panko I used cornflake crumbs in order to keep the recipe gluten free and I added seasoning to each step of the dredging. This was fabulous. My family raved and pork chops are generally a hit or miss in my house. They came out super juicy and flavorful. Will use this recipe again!

Gravy Baked Pork Chops
This was delicious! I followed the recipe exactly, only exchanging the water for the gravy with additional milk. THe flavor was great, the meat was tender and OMG the gravy was heavenly! Will definately make again!

Blueberry and Raspberry Pancake Topping
This was awesome. I used a combination of blackberries and raspberries because that's what I had on hand. I also followed the advise of another reviewer and added 1 T. of lemon juice and 1 T. of cornstarch disolved in 2T. of water. The only thing that detracted was all of the seeds. Next time I will run the syrum through a strainer at the end. Definately will be making often!
