Stovetop Granola

Even after baking in warmed oven for 20 minutes, it was still a little soft for my liking. I recommend making it a day ahead of when you plan to use it. Once stored in a container, it hardened up to a nice texture the next day. Other than this, it was tasty!

Cornbread that is a Meal

Good for an easy dinner, served with a side salad or carrots and ranch. I added a packet of taco seasoning to my ground beef, increased jalapeños to 5T since we like spicy food, and I used my old stand-by (non-sweet) cornbread recipe instead of jiffy mix. I baked for about 25 min at 400.

Just like my mom's except we use green onions instead of olives. I always make ahead to help the flavors meld, holding off on the nuts til right before serving so they don't get soggy.

Pizza Dough I

Pretty good for as simple and quick as the recipe is. I added some Italian seasonings to the dough before our toppings. Make sure you spread it out pretty thin and even because it rises as it bakes!

Yummy and easy to make. I halved the recipe for my family and it still made plenty for leftovers. I also decreased the amount of sugar but added half a can of creamed corn. Husband said it was a bit sweet (he doesn't like sweet cornbread at all) but still really enjoyed them.

Cajun-Crusted Snapper Fillets

Delicious and the batter stayed on wonderfullly! Would've given 5 stars except I increased the Cajun seasoning to 2 Tablespoons - using 1.5 t would not have been enough "Cajun" in my opinion. Will use this recipe go forward - thanks!

Blueberry Parfaits

Quick, simple dessert or snack; not an impress-your-guests dish as it's too runny. Didn't have real lemon or whipped topping on hand. Refrigerated the sour cream, brown sugar and lemon juice mixture for an hour and stirred my fresh blueberries straight in. Yummy. Tip: sift your sugar for easy mixing.

Marinated Grilled Shrimp

We followed the directions exactly as given and even used yummy fresh shrimp we brought home from our Gulf vacation, but I thought this was very blah. Even with loads of fresh basil and marinating it for a solid hour, I found it just okay and my husband said it tasted too tomato-y. Disappointed for a five-star ranking.

Cyndi's Shrimp Fajitas

Delicious and simple. I did add a sprinkle of cayenne pepper b/c we like things spicy. The marinade was good, and I love that it was 15 min. On the veggies, I squirted it with a bit of lime juice and a dash of cumin. Yum!

Peanut Butter Spread

Makes a ton! I halved the recipe and it was perfect for a couple loaves of yeast bread. Tastes a lot like the spread at the Der Dutchman in Marysville, OH. It seemed a little marshmallow heavy, so next time I'll ease up on that a bit. I did sub maple syrup for the dark corn, and it worked just fine.

Fruited Ice Cream

This is just like my Daddy's recipe. I couldn't get him on the phone to get amounts, so here I am. We make ours with mashed bananas. Delicious! I do love the egg/custard ice creams you cook on the stove first, but this one's so much easier and less heavy which is perfect for hot summer days. P.S. If you omit the vanilla, you get a "sweet cream" flavored ice cream for those that don't love vanilla. The sweetened condensed milk adds the perfect amount of sugar, so you don't miss the flavoring that much!

Fiery Fish Tacos with Crunchy Corn Salsa

Delicious corn salsa recipe! I used the marinade recipe from Grilled Fish Tacos with Chipotle Lime Dressing to spice up the fish a bit, but the salsa is wonderful. You can also make the salsa with a can of Lime & Cilantro Ro-Tel to spice it up and add tomato flavor if you desire.

Excellent marinade for fish! I didn't like the sound of the sour cream dressing, so I used the corn salsa recipe from Fiery Fish Tacos with Crunchy Corn Salsa for the topping instead. Excellent combo (and we don't normally even like fish tacos)!!

Irish Cream Truffle Fudge

Egg and Sausage Casserole

Very delicious and a hit at Christmas Eve brunch. Gave it 5 stars although I did make many changes suggested in the reviews: increased to 10 eggs, used Italian seasoning, reduced cheese to 2 cups, baked crescents 5 minutes before adding egg mixture.
