Squash-Apple Bake

What an interesting and delicious way to serve squash! The family loves it and requests it often. I tend to try to make it with a bit less sugar, but it's still darned good.

Black Bean, Sausage, and Sweet Potato Soup

It was okay but not really great. It's visually a little weird, but the flavors are good enough. It seemed to lack a bit of oomph. The first word out of the family's mouth was, "It's missing something." Then my son put hot sauce on it to make it a bit better. With three teens I seldom have leftovers of anything, but this had plenty. And we all opted for PB&J rather than eat leftovers for lunch.

Coriander Salmon

As good as any salmon seasoning and certainly quick and easy to prepare. It's stuff I always have on hand, too, which is a plus. I'll file it away in my brain for the next time I want to put something on salmon for a fast meal. But it wasn't super stellar or anything phenomenal.

Turkish Coffee Ice Cream

I'm not sure why, but this wasn't all that good. Too sweet, I think. And the cream felt heavy and stuck on the roof of my mouth. It wasn't refreshing and yummy like most ice creams, rather it was sicky sweet and cloying. But the flavor itself was really good. (I mean, how can you go wrong...coffee, cream, sugar...yum.) Overcome the proportion and texture issues and this might have promise.

Blue Cheese, Bacon and Pear Brunch Sandwiches

This is decent in taste, but nothing special like I was expecting. If you hate blue cheese, this won't have enough "yum" to overcome that. It's almost bland, to be honest. Would be better with a spread or sauce or something to tie the flavors together. I'm a major fan of all these flavors, but having them together didn't make magic like I'd hoped.

Sweet and Sour Salad

Most excellent. The recipe makes too much dressing, so use sparingly. But it's quite yummy. The kids loved the idea of the ramen crunchies. Make sure you don't forget the green onions....it was the perfect flavor.

Carrot Cashew Quiche

The taste was incredible and everyone loved it. However, there is more than enough saturated fat in this! Cut the butter to 3 Tbs (seriously) and use half and half instead of cream and this will actually be better (it is too fat as written, it's awfully heavy). This could even be reduced further and still have the great flavor. This is going to be a new staple meal and I can't wait to serve it at church functions.

Very much a favorite at our house. I tend to use a bit more pears and then bake it as a bar cookie. But either way it's delicious and my kids gobble it up.

Barbeque Seitan and Black Bean Burritos

This was okay. But the flavors were weird. The barbecue sauce overpowered it and made the whole thing too vinegary and salty. It would have been bad with any meat, so don't blame the seitan. Great idea, and I'll likely use the same concept with a different sauce. But not this particular combination. I was glad, however, to be given a chance to try seitan and I'll definitely seek it out again to be used in something tasting better.

Amazing Butternut Squash

I hate squash. It's mealy and insipid and yukky. But THIS is wonderful! I will gladly eat squash from now on if it's cooked like this. The onion was a nice flavor. I accidentally left out the brown sugar and my husband still thought it was too sweet (squash is naturally sweet). No way to change that! I get the impression from comments that people want this to be sweeter and don't like the onion....well....that would be trying to make this taste like candied sweet potatoes. And it's not that kind of dish at all. Try it as written, or even leave out the sugar. Oh, one more thing...I didn't have saltines. I just crushed up some bran cereal flakes instead. Worked just fine.

Braised Balsamic Chicken

Whipped Cardamom Sweet Potatoes

Heaven. I didn't whip the sweet potatoes, really no need. The butter makes it very yummy but if you're watching fats then it can easily do with less. It would still taste fine. The shallots are great, but carmelized onions would work if you can't find shallots. I spent a lot for shallots at a specialty store and it really wasn't any different than onions.

Spicy Garlic Salmon

Very tasty and very easy. I usually have this stuff on hand so it's going to be my new go-to way to cook fish. I used red pepper flakes instead of grinding a whole chile, so I got it a bit hotter than my daughter liked, but the rest of us thought it was fine. No biggie, the amount is easy to adjust.

Cheesy Apple Salad

Absolutely gobbled up by the entire family! I really was surprised at how good this was. Upon reading the recipe I thought the orange juice sounded weird, but really it was what made this taste extra nice. The kids had third helpings of it. By the way, the recipe is for only two helpings, you'll have to scale up to feed a family.

Curry-Style Chicken and Spinach

It was tasty enough. I doubled the spices and used an onion rather than the onion powder. Certainly a good way to use up spinach and chicken. But as my daughter stated, "There's really no reason for the chicken in there. It would almost be better without it and eaten as a vegetable dish." I think she's right. Also, we eat a lot of Indian food and are used to the spices so this seemed rather bland. It needs some oomph to make it special.

Blackened Salmon Fillets

Very good spice rub. Just the right hotness and great flavor. I agree with the other reviews about broiling it rather than frying. Also very important that the fish not be too cold when you put the butter on the salmon or it will harden and the spice mix will flake off.

Avocado Fennel Citrus Salad

First let me say that we'll try anything and the odd combination of ingredients wasn't a turnoff. I really wanted to like this, but it was just eh. The citrus tasted good but the avocado and the fennel were just blah and bland. Maybe we just had bad fennel, but I was expecting a bit more juicy crunch. We ate it all and it wasn't exactly repulsive or anything, but it just didn't have a compelling taste that made me want to eat more of it.

Good Cookies I

The flavor of these is very good, but the texture is kind of greasy. The cookies aren't chewy, rather they're crumbly like old shortbread cookies, leaving a greasy feel on your fingers.

Super-Delicious Zuppa Toscana

Easy to make. Turned out a lot better than I'd expected. The family RAVED on it. But I'd prefer it with a bit less fat. Next time I'll drain the sausage better and use milk instead of cream. Otherwise, EXCELLENT.
