I'm not the best at precision baking. I remember one fruit upside down cake that never made it to the table!

Italian Eggplant Salad
It was awful. The color was the worst shade of greyish brown, the texture was slimy, there were a million seeds in it, the taste was way off, and I can't imagine eating it myself no less serving it to anyone else.

Berry Cornmeal Muffins
This even worked well at high altitude. I can't say enough about how good these are. I even made them as mini muffins and they are the perfect bite of soft, sweet, fruity yumminess.

Almond Crunch Granola
This is one of the easier granola recipes I've made. Turned out beautifully. I added about a half cup of dried fruit (blueberries and cranberries) and used sweetened coconut, whole almonts, and a little salt to taste. Magnificent!
