Cauliflower Lettuce Salad

After I put this in the fridge to chill, I thought how it would be good with peas in it. I just noticed that the photo shows it with peas. Why it's not listed in the ingredients, I don't know, but I think it would be 5-stars with peas and maybe purple cabbage in it. I made a much smaller batch for two people and it turned out very good. The only bad thing is, leftovers are not feasible. It gets very wet & soggy after it's been tossed. I will try mixing mayo & sugar, then tossing it and the bacon in before serving, just for the amount I need.

Creamy Broccoli Bacon Soup

This is my own recipe so I'm biased! It's tasty and fits into my low carb plan. Very awesome leftovers! Works great with asparagus also.

Sauerkraut Casserole

This didn't turn out very good for me. I followed exactly, except I cooked the bacon first as I wasn't sure if it should be or not. It turned out quite dry. Maybe the uncooked bacon would have added some fat to the dish. I'd try again.

Barley Casserole

This is a very good recipe that can be altered to fit your taste. The casserole technique works great for the barley. Healthy with the veggies & very little fat. I added extra garlic, one chipotle in adobo sauce, minced. Could be a vegetarian main dish if using vegetable broth, or is great as a side dish (I served with meatloaf). Also needed a bit more salt than the recipe called for. Will try with other veggies.

Black Bean and Corn Quesadillas

I didn't change anything about the recipe, but the beans I used were spiced in the can, and I used low carb tortillas. These turned out delicious. I might try adding tomatoes, but they were good as is. Thanks for sharing - excellent!

Mexican Chicken and Tomatillo Stew

Easty to make. I made according to recipe, but think you could add other veggies, such as corn. This is a good recipe to start with, but I would make some changes if I make it again. Had not had sweet potatoes or tomatillos in soup before, would use both again. I fried my tortilla strips on the stovetop and sprinkled with salt & chilli powder - that made the soup for me.

Japanese Peanut Salad Dressing

Very tasty as is, but I might change it up in the future. I used on a pasta salad and it was great. Would work nicely as an Asian slaw dressing as well.
