About this Cook
Been married for almost 2 years, and I love having a kitchen of my own! My recent cooking focus has been primarily on healthier options for us, low cal and low carb when possible. I've been enjoying working on my asian cooking especially-someday I'll learn to make sushi properly! I've been facing some new challenges recently in cooking, as I am no longer allowed to have any wheat, sugar, dairy, corn or oats-all due to food allergies. So suddenly all the recipes I used to make frequently I need to alter alot, or just make up new recipes. It's been a fun challenge!
My favorite things to cook
I love cooking desserts, they are so fun, so easy to get creative with! I enjoy holidays for that sole reason. Anything that I can use my rice cooker for.. (thank you Furuba for tempting me into buying one!)
My favorite family cooking traditions
Ham and green bean casserole. That would describe my Grandma. Mom can whip together a great meal in no time at all. Someday I'll be like that..

My first cheesecake, spinach stuffed chicken, cheese encrusted salmon, stuffed bell peppers, miso soup to die for...

None yet! (unless you count the green pancakes that I undercooked when I was 11...)

Ten Minute Szechuan Chicken
Soo good! I made a few changes-kept the sauce exactly the same-and it was AMAZING!! I changed the chicken to beef, added two carrots and 2 broccoli stalks. Next time I'll add some water chestnuts too...ooh, was it amazing! This is going on my meal plan menu, hands down! Thank you!

Spicy Salmon with Caramelized Onions
Soo good! The only complaint is we weren't expecting it to be soo spicy. But we just drizzled a bit of maple syrup over it, and it was heavenly. My guests gave it a 5 out of 5. Thank you! We served it with butternut squash, rice pilaf and a baby green salad with apples and grapes in it. Delish! Will make this again and again!

Turkey and Quinoa Meatloaf
AMAZING! I had to sub soy sauce and ketchup and vinegar for the wort. sauce, as I can't find any wort. sauce that's wheat free. Aside from that sub, I followed the recipe exactly. And we were stunned with how good it was! My hubby does NOT like quinoa, but he LOVED this meatloaf! Thank you for such a lovely keeper recipe!
