Dough Ornament Recipe

I took advice from others and turned down the temp to 200 -- it took about 5 hours, but they were done with no puffing. I even dropped one on the tile floor as I was taking them off the cookie sheet and it didn't break. My only other helpful critique is that this is a HUGE recipe. Enough for an entire preschool class at least. We made 20 ornaments, and still had about a third of the dough left. I just tossed it because I'm already not sure what we're going to do with 20 of these things!

Eggplant and Pepper Parmesan Sandwiches

This was so yummy. My hubby and I are new to eggplant, but got a lot in our CSA this week so trying it out. I salted and pressed the eggplant for about two hours, then rinsed and baked. It was good, not bitter at all. I would say however that you need to make sure to oil the cookie sheet -- the eggplant stuck pretty good making it not very pretty. But it was covered in the sandwich anyway. I roasted peppers from our CSA as well for this, but couldn't find tapanade at the store, so just used a spicy red pepper mustard that tasted great with it. Delicious. Served it with roasted green beans. Great meal. My hubby said he would have been happy having it been served as a meal in a restaurant, which I think is a big compliment from him!

Blueberry Zucchini Bread

I loved this, my husband loved it, my kids loved it! made some changes to make it healthier and it still turned out fantastic. Substituted all oil with no-sugar added applesauce; used half whole wheat flour, half white; used only egg whites; used one cup Splenda, one cup regular sugar. Also cooked just one large loaf, and it took about an hour and 15 minutes total time. Going to make more once the next zucchini in the garden gets big enough!

Candied Chicken Breasts

I am doing something I normally don't like with other reviewers: I made this very different than the recipe called for. But it was delicious and I think much easier than what is called for here, so I thought I'd share. I made this as a one pot meal, mixing the sauce together in my cast iron pot, them adding cut-up pieces of raw chicken. I cooked for 30 minutes (which seemed a bit too long -- the chicken was a bit dry) and added pineapple pieces for the last 10 minutes. I mixed prepared rice straight into the cast iron pot, making this an easy, quick weeknight meal for my family. Something I will definitely make again!

Love Mussels

Made these for dinner last night -- my husband couldn't stop raving. I've never made mussels before so was a little nervous but it was super-easy. Followed the recipe exactly and sopped up the extra sauce with crusty bread. With a small salad on the side it was a perfect, quick, at-home dinner. Will definitely be making these again.

Downeast Maine Pumpkin Bread

AWESOME! Made a loaf of bread and muffins with recipe. Got rave reviews from everyone -- moist, flavorful and no need for butter or any other accompaniment. Made two changes: Splenda instead of sugar and applesauce in place of oil. Will definitely be making this again and again!
