Black Bean Tortilla Casserole

Reviewed: Jan. 24, 2009
I stuck with the recipe and it was excellent. It had a little sweet taste to it. I wonder if it's the cumin? Next time I'll probably add a little more "hot" flavor. This is a recipe worth repeating.

Restaurant Style Mac and Cheese

Reviewed: Feb. 20, 2009
This mac and cheese recipe is a HUGE hit in our home. My 3yr old asks for it at least once a week. With leftovers, that's eating it twice a week. My husband and I like it much better than the box. We also delivered it in a dinner when we were helping some people out - they absolutely loved it too. Said I was the best cook in town!!! :) Thank you for sharing!

Seven Layer Dip I

Reviewed: Feb. 20, 2009
My family loves it. The best thing is it is so easy. My sister in law said to add a can of chili too. It was pretty good that way too. Just depends on the flavor you want. We use this with our kids as main dish some days. They devour it!

Texas Chocolate Frosting

Reviewed: Jun. 9, 2009
Needed a chocolate frosting last minute and I am so glad I picked this one! I put it on a yellow cake and it was scrumptious! I love the chocolaty-fudge flavor it has. It was so good that a cake that usually lasts a few days was nearly gone the first night! I will use this again and again. Thanks for sharing!

Cheesy Italian Tortellini

Reviewed: Jun. 9, 2009
This is a great family dish. I did use the crock pot because I had a busy day of errands. The only substitutions I made since I didn't have sausage or hamburger meat, I used meatballs from Costco. I also added a can of tomato paste and left out the mushrooms. (Preference only) My family loved it!

Chocolate Mayonnaise Cake II

Reviewed: Jun. 9, 2009
Needed something different for a family dinner and this turned out to be the perfect cake. I sprinkled powdered sugar over the top and WALLAH-just the right amount of sweetness for a great dessert. Simple, easy and great tasting!

Tater Tot Bake

Reviewed: Jun. 15, 2009
WOW! This was an excellent last minute throw together meal! I used an onion from the garden and the lipton onion soup mix and it turned out GREAT! I also served green beans and corn on the side. I agree with the others this is a kid and husband friendly meal. I will definitely make this again and again!

Eileen's Meatloaf

Reviewed: Jul. 15, 2009
I am not a meatloaf fan, but this recipe is incredible!!! There's no tomatoey stuff you pour on top of it. It doesn't need it. It is moist and flavorful. Love it! I have made it several times and once for my in-laws and they loved it too! Great for sandwiches the next day too.

Microwave Caramel Popcorn

Reviewed: Sep. 17, 2009
This was sooo good! I took it to a baby shower and had several people ask for the recipe. I only had dark corn syrup and it worked just fine. I look forward to adding the chocolate chips next time. The idea to put it in a bowl and then transfer it to get the unpopped kernels out easier was a great idea. Thanks for sharing this!

Marshmallow Treats

Reviewed: Sep. 19, 2009
This recipe was a hit for my little preschoolers class. We made them for 9/11 and added red, white and blue sprinkles on top. They turned out really cute. Adding a little milk once everything was added together really helped to make them chewier (is that a word?). :)

These were incredible! Didn't have onion powder so I used Montreal Steak Seasoning. I did read follow others advice and turned them over half way through and they turned out perfect! My whole family loved them including my 1 and 4 year old. We will definitely be making these again and again.
