My Amish Friend's Caramel Corn

I've made this recipe dozens of times in the past year, and it always gets rave reviews. Over the years, I've made so many caramel corn recipes, but this one is without a doubt the very best recipe I've come across.

Fast and Friendly Meatballs

Very easy and very tasty - that makes it my kind of recipe! My kids love them. These are great in spaghetti sauce and wonderful on meatball subs. Edited on December 17 to add: I made these tonight with sweet Italian sausage instead of turkey. They were so good I ate at least 5 of them before I put them in the spaghetti sauce!

Raspberry and Almond Shortbread Thumbprints

My kids love Knotts Berry Farm strawberry shortbread cookies, so I've been searching for a similar recipe. This is the closest I've found so far. I didn't use the icing, and I used Solo filling instead of jam. I also found the cookies flattened a little more than I would have liked, so next time I will chill the dough first. We're having our Christmas open house this Sunday, and these cookies will be on my table. Well, if I don't eat them all first, they'll be on my table!

Low Fat Buttermilk Ranch Dressing

This is so good! I've tried so many low-fat dressing recipes before that were runny and bland. This makes a hearty, thick stay-on-the-lettuce dressing that kicks butt! This has an amazing flavor, but I will cut back on the salt when I make it again. I think 1/2 teaspoon would be sufficient. Other than that, I would not change a thing.

Cadillac Pimento Cheese

Really, really good. We used low-fat cream cheese and low-fat mayonnaise and it turned out great. Next time, I will cut back on the cayenne pepper slightly since I'm not too keen on cayenne, but I will definitely make it again.

Rosemary Chicken Couscous Salad

This was just awesome! I made it as written since this was my first cooking experience with couscous and my first time with a Mediterranean style dish. I will make this often, but I will definitely cut way back on the olive oil, and I'll use fresh tomatoes and cucumbers out of my garden instead of sun-dried tomatoes and English cucumbers. Probably going to use black olives next time just from an expense standpoint, too. I'll also thoroughly cool the couscous before adding the cucumbers since the cucumbers became slightly less crispy because of the warmth. The flavor was unbelievably good, and I'm trying to think of other uses for the dressing.

Caramel Frosting V

I give this a four on flavor, but a five on texture. It is the creamiest caramel frosting I've ever made. There was absolutely no graininess the next day, even though most recipes I've tried had at least some minor graininess on day two. It took about 12 minutes to beat it to the correct texture, so be prepared to spend a little more time with this recipe than most.

Clone of a Cinnabon

This recipe certainly didn't blow me away. They were good - we ate them all - but I won't make them again. I've been trying various cinnamon roll recipes in search of that "perfect" recipe, and my whole family agreed I've used better recipes in the past.
