Sombrero Chicken
This was a simple recipe, easily adaptable if you are out of one thing or another. I did cook the bacon separately and used only a bit of the grease for the onions and peppers. I had a liquid fajita sauce so marinated the chicken in that and then drained it off. The tomato I thought I had I didn't, so instead I tossed in a drained can of Rotel at the end and heated it for a minute before turning off the heat and adding the cilantro and cheese. I had a jalapeno Monterey Jack cheese so threw that on for the melting and did use less so that it didn't overpower the dish. Tasty and easy - something that anyone who likes southwestern/Mexican flavors will enjoy.

German Pork Chops and Sauerkraut
I have to give this 5 stars because of the rave reviews everyone gave it. I followed the recipe in terms of ingredients, though I only had 5 chops instead of 8. I did not change the serving size for the other ingredients and am glad I didn't. The sauerkraut and apple made a great side and went well with the leftover mashed potatoes we had in the fridge. I did not follow the cooking instructions just because of schedule. I seasoned the chops with salt and pepper and then browned them just long enough to get a good sear. Then I put them in the crock pot, threw the sauerkraut mixture on top and cooked on low for 4 hours. It turned out great and was so easy so it was definitely worth the investment.

Curried Coconut Chicken
This needed a little bit of spice adjustment for us. We added garam masala, ground coriander, ground cumin, and a sprinkle of chili pepper flakes. We also cut back on the tomato sauce, just adding a little at a time until we got the taste and consistency we wanted. This is a good base recipe that takes well to your additions of spice and vegetables. We'll use it again.
