Really good. I keep the cottage cheese and soak the noodles before baking as suggested by another reader. Very tasty and no store bought sauce!

Easy Chicken Enchiladas

Delicious! Like others suggested, I cut the cream cheese in half- I think the whole pack would be a bit much. I might try with reduced fat cream cheese next time too. I had extra salsa, so I covered the enchiladas with that and then covered with cheese. I didn't have any leftover cooked chicken, so I stir fried some with onions, garlic, and a bit of taco seasoning before adding to salsa/cream cheese mixture.

Baked French Fries I

I took other reviewers suggestion and baked at 200C/400F, and kept an eye on them- took about 40 min in my fan assisted oven. Soaked wedges in salt water before mixing spices in. Good stuff, will definitely make again!

Chicken Pot Pie IX

Delicious! My first ever chicken pot pie, although I've made beef and onion pie before. On the tips of other users, I boiled chicken, carrots and a couple small potatoes in chicken broth, adding frozen peas towards the end of the 15min. I then sautéed onion, celery and 2 cloves garlic in butter ( not as much as called for). I added chicken mix to liquid before putting inton9x9 pan and using top crust only. Also omitted salt as there was some in my chicken broth and added a bit of dried dill. Fantastic recipe, will def use again!!

Gourmet Mushroom Risotto

Delicious! I'd never made risotto before but came out perfectly. I didn't have white wine, so just skipped that bit and used chicken stock, although I will try with wine next time. Served with grilled chicken and homemade tomato and basil bread...yum!

Double Tomato Bruschetta

Delicious and easy! If stuck for time, I use a drained tin of chopped tomatoes, still turns out yummy :) I also tend to reduce the amount of olive oil slightly.

Baked Chicken Nuggets

Delicious! On other readers suggestions, soaked the chicken in buttermilk while prepping the breading, then baked on a rack on baking tray. Didn't have breadcrumbs, so put 2 loaf ends in food processor and added hot cayenne chili powder, dash of garlic powder and a bit of freshly ground pepper. I used 2 large breasts and would have needed more breading for 3, especially as I was already using a generous 1C bread crumbs. Will definitely make again!

Chocolate Hazelnut Teacake

Buttery Soft Pretzels

Good, but not quite as amazing as many reviews say, although that might be my fault since this is my first pretzel making attempt, despite making lots of bread and pizza dough. On the advice of other reviews, I started with 3C flour and only added another 1/2 C. Other than that, ingredient amounts seem just about right. I also lowered the oven temp a bit. Will def try again.

Toasted Garlic Bread

Yum! I make this to go with homemade pizza and it's fantastic. If I ever have leftover garlic butter, sometime I melt it and toss it with cubed old bread which I then toast to make delicious croutons. Great recipe and good with or without the cheese.

Chicken Tikka Masala

Absolutely delicious! After reading other reviews, I too really reduced the salt in both the marinade and sauces. I also used a dash of cayenne instead of jalepeno in the sauce, and garam masala instead of cinnamon in the marinade. Since I didn't want to mess around with skewers, I also cooked the marinated chicken on a wire rack (over a cookie tin) in the oven at 180C, as per some suggestions here. After debating what the closest was to 'tomato sauce' here in Ireland, I used tomato passata after doing a bit of googling, and it came out just right. This was by far the best recipe I've tried for tikka masala, and I served it with the Naan and Indian basmati rice recipes found on this site. This recipe is definitely a keeper!!

Indian Style Basmati Rice

On the suggestion of another reviewer, I halved the cumin seeds and out of necessity had to use ground cloves. It turned out perfectly and I served the rice with the chicken tikka masala and naan recipes from this site. Very easy and very tasty- I'll definitely use this again.

Naan

Absolutely delicious- far better than the store bought ones. I do a fair amount of baking, but have never attempted naan before, but it's safe to say this recipe is now a keeper- it was so easy and turned out so well. I chose to omit the garlic, although I may try this in future. I was also a bit leery of cooking it on our gas grill, but it came out perfectly. Highly recommend this recipe!

Bread Machine Bagels

Very good! Just made for first time. Couple changes- doubled the amounts (still fits in my machine) but reduced yeast a little (1/2 tsp less than doubled recipe called for). Will add cinnamon next time as I just kneaded some in after dough was ready, but not cinnamon-y enough for my taste that way. Good bagels are impossible to get in Ireland, so at least now I won't have to get by with terrible store bought ones!

Peasant Bread

Good bread. I used french bread setting on my machine and reduced yeast to about 2tsp of fast acting. I'll probably reduce the water amount a little bit next time too. Makes good french toast!
