Cookie Butter Cookies

After finding this recipe we drove to Knoxville to Trader Joe's for the cookie butter. I followed the recipe exactly (as usual before submitting a review) and although this is a good recipe, I feel it might be even better substituting Nutella for the peanut butter. The peanut butter seemed to overpower the flavor of the cookie butter. So next time I will make this substitution and see how that works out. There is also a recipe online to make your own cookie butter, but I have not tried it yet. All in all this is a good recipe that did not disappoint.

Farm Fresh Zucchini Cranberry Nut Muffins

I made this recipe exactly as posted and think it is a bit too sweet. There is another zucchini bread recipe on this site, that is named either Mom's Zucchini Bread or Grandma bread, that I will add fresh cranberries to.

Chewy Coconut Cookies

After reading as many reviews as possible, I did increase the flour to 1 1/2 cups. Instead of butter, I did use butter flavored shortening. I do not care for a "greasy" cookie, so this is why I opted for the shortening. I also used 1/4 tsp each of coconut, vanilla and almond extract. My cookies baked up great! I promised myself a coconut cake for my birthday, and not wanting to wait until April I am hoping they will hold my craving until then. With the minor changes made, these are great cookies!

Strawberry Cinnamon Oatmeal Muffins

As an avid warehouse club shopper I had a surplus of strawberries left over. Not wanting to waste a thing I thought this would be a great recipe to try. The only modification that I made was to use vanilla greek yougurt instead of the oil. I also had on hand strawberry extract and used 1 tsp. of that. I would like to add that I am sure the submitter of the recipe meant well, but I for one, would appreciate some kind of measurement on the strawberries.

Maple Muffins

I have not made these yet, to those who complained about the lack of maple flavour, you could always add a bit of Mapeline (sic?) or Maple extract. You also could mix up a bit of a glaze and add either maple syrup or extract. I will be trying these soon though. I always try to stick to the recipe the first time I make a recipe, as I feel it is a bit unfair to rate something if not tried.

Banana Streusel Muffins

Great recipe! This particular recipe gave me 12 FULL muffin cups! Adding the streusel made it look messy before baking, but once baked, they look great. No overflowing at all. I did check them at 20 minutes, but baked them at 30 minutes. This recipe is a great alternative to the "Cream Cheese Banana Nut Bread" recipe that has appeared on other web sites. The main, and important reason, this is a great alternative is that the recipe uses sour cream instead of cream cheese. For those on a budget and watching their money, where I am located cream cheese has doubled in price, while sour cream has not.

Southern Praline Pecan Cake

This is one of those recipes that simply should stand on it's own! I totally understand that there are some reviewers that feel the need to "reduce this" or add that, but this is one recipe that is part of my rotation, and can stand as written.

Raspberry Cream Cheese Coffee Cake

Baked the recipe exactly as instructed. The only change I made was to use a 10" Springform pan instead of the 9". Although I have not even cut into the cake I know this is going to be very good. I did double the raspberry jam though, with the increase in pan size.

Orange Marmalade Cake

I doubled the batter as suggested by others, and this does nicely. If you do this, then I would reduce the oven temp to 325 and bake longer. I started the cake out at 350 and within a half an hour noticed that the edges were browning too much. So I reduced the temp. I would like to add that I made this batter per the recipe, and this cake can be quite dry! I had leftover Orange Marmalade from my Christmas gift giving and thought this would be a great recipe to try. Not as sweet as I thought it would be, but if you do attempt this one, a simple syrup poured over the cake could make it a bit less dry. Won't make again.

Blueberry Buttermilk Coffeecake

I typically cringe when I read reviews where the person has changed so many aspects I ask myself "why did this person review"? With that said, I did make this coffee cake only adding the zest of one lemon to the topping. This is a large coffee cake and without the added dimension of another flavor, the blueberries could have become repetitive and/or lost. But the basic recipe is good, you could also add a bit of orange zest to the topping too. But traditionally bakers do use lemon zest.

Ultimate Maple Snickerdoodles

Simply Great! My husband, being Canadian, I am always on the lookout for maple this or that. With my cookie scoop, this recipe made two dozen. I followed the recipe, making on change, using butter instead of margarine. I "made" the maple sugar by mixing in 1/4 t. to the rolling sugar and this worked out just fine. I think the amount used for the rolling sugar is too much and can be cut in half! I will use the excess on something I am sure, but I have lots left over. With the larger size I baked these at 350 for 12 to 15 minutes. This recipe, for sure, will be part of my rotation! Many thanks for sharing!

Peach Pound Cake

I made this recipe exactly as posted and found this not as sweet as I imagined it would be. The texture was OK, although I thought it was a bit "eggy" tasting. Nice for a change, but will not be part of my rotation.

Zucchini Brownies

I followed the recipe exactly and must say that an electric mixer should be used to incorporate the zucchini, then fold in the nuts. Other than this change the recipe ROCKS! Thanks!

Donut Muffins

Very easy to make! I did use butter, and agree that this much melted butter to dip was more than I needed. It is also more sugar/dipping mixture, but I always freeze this type of thing if there are leftovers for other muffins and the like. The recipe did make 12 mini muffins for me.

Apple Harvest Pound Cake with Caramel Glaze

This is one of those cakes that tastes better the next day. I have to admit that I did not care for the carmel topping, but it is easy enough to mix some icing sugar with milk, a bit of butter and some vanilla, then top this with some toasted walnuts. I had no problems with the cake being dry, but I would check for doneness at about an hour.
