Cookie Butter Cookies
After finding this recipe we drove to Knoxville to Trader Joe's for the cookie butter. I followed the recipe exactly (as usual before submitting a review) and although this is a good recipe, I feel it might be even better substituting Nutella for the peanut butter. The peanut butter seemed to overpower the flavor of the cookie butter. So next time I will make this substitution and see how that works out. There is also a recipe online to make your own cookie butter, but I have not tried it yet. All in all this is a good recipe that did not disappoint.

Farm Fresh Zucchini Cranberry Nut Muffins
I made this recipe exactly as posted and think it is a bit too sweet. There is another zucchini bread recipe on this site, that is named either Mom's Zucchini Bread or Grandma bread, that I will add fresh cranberries to.

Chewy Coconut Cookies
After reading as many reviews as possible, I did increase the flour to 1 1/2 cups. Instead of butter, I did use butter flavored shortening. I do not care for a "greasy" cookie, so this is why I opted for the shortening. I also used 1/4 tsp each of coconut, vanilla and almond extract. My cookies baked up great! I promised myself a coconut cake for my birthday, and not wanting to wait until April I am hoping they will hold my craving until then. With the minor changes made, these are great cookies!
