Russian Cabbage Borscht

Reviewed: Nov. 21, 2011
Yum! This is excellent. I used purple cabbage and it was beautiful and tasty. I also used the input of other reviewers to mash the potatoes with a fork near the end of the simmering time. Also, I used beef broth and omitted the beets.

Tuna Noodle Supreme

Reviewed: Sep. 13, 2011
Best tuna casserole ever! Didn't think swapping out the condensed soup would make such a difference. It did. Added leftover roasted brussel sprouts, mushrooms and chopped kale. Did without the cheddar on top and it was great!

Lentils for Stagflation

Reviewed: Jul. 16, 2011
Surprisingly good! I did make a few changes. Sauteed 1/2 cup onion in the oil before adding lentils, added fresh tomatoes (canned would be good too) about 10 min into cooking so they stewed a bit. Will add carrot medallions next time. Also drizzled a little agave nectar over it at the end - needed a little sweet to go with the spicy. Good recipe. Will make this again!

Creamy Corn Chowder

Reviewed: Aug. 1, 2010
Decent - but not a ton of flavor. The tofu makes it very creamy!

Cajun Seafood Pasta

Reviewed: Jan. 25, 2009
Wonderful! I modified to make a little healthier. Used 1/4 cup cream, 1/4 cup milk and 1/2 cup of tomato sauce. I omitted the swiss and topped with a dusting of parmesan instead. Served with whole wheat pasta.
