Honey Walnut Shrimp

Quick & delicious; the full sink of clean-up is well worth it. I served it on top of angel hair & asparagus, and thinned mayo sauce with regular milk because I didn't feel like opening a can of sweetened condensed for a tablespoon; worked fine. ;)

Samhain Pumpkin Bread

Made a loaf AND 12 muffins/cupcakes. Didn't have allspice; subbed ginger. Didn't have walnuts, subbed toasted pecan pieces. Also added bittersweet chocolate chunks, just 2 ounces so as not to overpower the pumpkin or spices. I DIE! So good.

Italian Rice Balls

A fantastic "arancini" recipe as is, or doctored up (as is usually the case with me!). I added fresh garlic and minced red pepper for a surprise of color inside. AND, since my restaurant is a "no-fry" zone, I had to bake the rice balls – and they turned out perfectly! I gave them a nice coating of bread crumbs and then baked them on an oiled sheet till browned and crispy. Nice to know there's an alternative to frying them!

Now one of my favorite recipes. Great for summer -- or for a taste of summer on a dreary winter day. Good fresh or a few days old (softened noodles are still delicious).

Kind of weird -- the combination of ingredients yields an unusual taste that's difficult to pinpoint. More of a kid's snack than a "grown-up" hors d'oeuvres.

Apricot Balls

I made these with chopped pecans and very little brown sugar. In fact, I think the sugar can be omitted entirely! I froze them overnight before serving -- they're fine right out of the freezer or thawed.

Coq au Vin alla Italiana

Delicious, especially on this early fall night. I didn't have sausages, so I threw in some sage and thyme. I also slow-cooked it for about an hour -- I like the meat falling off the bone -- and served it over pasta (like Italian goulash!) and more mushrooms. Do have bread on hand to mop up the sauce. Yum!
