Simple White Cake

Whole Wheat Apple Muffins

These are great muffins! A lot of people mention they are not sweet- duh, there is no sugar in the recipe! I prefer them without sugar. I replaced the oil with an equal amount of apple sauce which made them a little dry - more apple sauce next time should do it. I used 1 egg instead of 2 whites. I also used a few table spoons of applesauce mixed with a few tablespoons of flour and cinnamon and a small hand full of oats on the top then I sprinkled with almond bits. YUM! Thanks JJohn!

Sloppy Joe Sandwiches

Yup, awesome sloppy joes!! I used ground turkey that was leftover from making tacos (it was seasoned with onion, garlic, steak seasoning and cumin) I had a little more than a half a pound of meat but less than a full pound so I went with the measurements listed and added a splash of vinegar per reviews (apple cider was all I had on hand) but it was a little dry so I added a small can of tomato sauce and it was so perfect. I will make these time and time again. Thanks Laurie!

Hot Mexican Spinach Dip

I'm sorry but this dish just wasn't for me. I had a large bag of spinach to use from Costco so I decided to try this. Some of the ingredients seemed weird but I decided it had to be good with so many positive reviews. Nope. Maybe it was because I used a 'mexican blend' of cheese, or maybe it was the brand of salsa, or the fresh spinach or maybe all of that combined. Sorry Linda. Glad others enjoyed it.

Chocolate Chocolate Chip Cookies I

These are awesome cookies. I added a box of chocolate pudding mix for extra chewyness (but it made the batter very dry) and used dried cherries instead of nuts. OM NOM NOM!!

The Best Rolled Sugar Cookies

I used 3 cups of sugar as other reviews suggested and they were too sweet for me. I will try 2 cups as the original recipe says next time. Shows me for going with the reviewers first, haha. I used double the vanilla and added some pure almond extract too, it really gives the sugar cookies that 'something' These are super fantastic cookies. I will use this recipe again and again and again. I used a dinosaur shaped sandwich crust remover for awesome dino cookies.

Pumpkin-Oat Scones

These did not work out for me. There wasn't nearly enough pumpkin flavor. Is 3/4 cup of pumpkin accurate? They tasted floury and oatmealish. I was quite disappointed. These also lacked scone texture likely due to the temp/baking time. If I make these again I'm bumping up the pumpkin and baking at 350 and I will check them after 20 mins. Also the directions were phrased oddly, I had to re read them about 5 times mid knead. UPDATE- I tried these again tonight (I really want some scones!) but these still don't work for me. I make pumpkin cookies with oatmeal and I love them but it just doesn't taste right in these scones. Not sure about the butter either. Anywho I bumped the pumpkin up to a cup, added some honey and added a little more flour while folding because it was so wet. Baked at 350 for about 25 minutes. Still a no go. Lowering my rating from 2 to 1 star.

Mmm-Mmm Better Brownies

These are great brownies! I will never buy a box mix again! I was a little heavy handed on the vanilla and I will be sure to use a little extra next time too. I will also bump up the cocoa a little bit, or reduce the sugar some. I used cake flour as it was all I had on hand and these had great texture, cake like. Will make with AP flour next time for that dense texture though!

Chocolate Cobbler

Wow is this good or what?!?! I searched for something with cocoa and flour but no egg or oil and found this amazing desert. I never knew there was such a thing as chocolate cobbler. I am so happy I made this instead of brownies. I love the sauce that this makes but you can tell its made with water. I am going to make this again with half water half milk. I will also reduce the sugar in the second step for personal preference (maybe 1/2 cup less). I doubled the recipe and used a 9x13. I didn't change a thing and I really don't understand the negative reviews on this, other than the rubbery texture which was likely caused by over mixing. Seriously, make this desert :)

Lemon Cupcakes

These were perfect, exactly what I was looking for. light, bright lemon flavor. These are a more 'grown up' lemon cupcake but my 5 year old liked them too. I will make these often. OH-I needed 5 medium lemons for the zest. I couldn't find that info in anyone elses review...

To Die For Blueberry Muffins

These are excellent and so easy! I will never buy muffins again! I used fresh Oregon blueberries and can't wait to try with some raspberries or blackberries. I did not make the crumb topping with these, they are great as is. I made 20 huge top mini muffins with one batch. Will try with chocolate chips and all sorts of stuff next time. Thank you so much for this awesome recipe!!

Jalapeno Popper Chicken

Made a great appetizer. I used the method for this to make my own dish, I used the cream cheese mixture on top of bite sized cooked chicken and wrapped it in a crescent roll then baked it, so good, such a hit.

Light Chocolate Chip Cookies

These are good, great texture but they were pretty sweet. I may try again using less sugar and the whole egg as I'm not concerned about the fat or calories, this was just the first recipe i found with 4 stars.

Pumpkin Fudge

This was really yummy. I added nutmeg and cloves and an extra dollop of pumpkin ( i used a large can for a few recipes and didn't want to waste any pumpkin) the extra pumpkin made me need extra time for the fudge to set, about a day and a half. i might try making some of this fudge into balls and coating with white or dark chocolate for an extra decadent treat!

Colleen's Slow Cooker Jambalaya

This is so good. I've made it 4 or 5 times. Don't skimp and use kebasa or smoked sausage, real andouille makes the difference! I use extra cajun seasoning and no shrimp. I want to try with carrot but always forget to buy it when im getting everything else. This gets pretty soupy but I simply drain the mix before adding this to rice.

Creamy Au Gratin Potatoes

Wow, these spuds are awesome! I added some spices to the potatoes before topping with the sauce (salt,pepper,paprika and garlic powder). I added extra cheese to the top during the last 20 mins of baking but don't recommend doing that, it was much better without the extra cheese. Will be making this a lot more!

Pork and Green Chile Casserole

This was good however I can't figure out how 1/4 C of water was supposed to cook 1 1/2 cups of rice?!? I used white rice, maybe the brown takes less liquid? Anyway I ended up using about 2 cups of water. I added extra green chilis and can tomato to fit my tastes. I think i would use more pork and less rice next time. I also used pepperjack colby and cheddar cheeses. Oh. I seasoned the pork with the cumin, all seasoning and pepper before browning. I will keep this recipe, and play with it :) UPDATE 10/28 I made this tonight with pork, leftover rice and an entire jar of salsa. I browned the pork, added the leftover rice, a can of black beans and a jar of salsa. I let it cook for a minute then topped with cheese and popped it in the oven. One dish. It was done in 20ish minutes. That's how I will be making this from now on (pre cooked rice, more salsa, no soup)

Rosemary Ranch Chicken Kabobs

YUM! I was a little nervous about some of the ingredients listed but trusted the recipe and I am so glad i did! TASTY TASTY! I am only giving 4 stars because garlic should have been included. i cooked my chicken indoors on a grill pan without skewers, served with pita bread and wild rice. certainly a keeper!

Fettuccine with Sweet Pepper-Cayenne Sauce

I rough chopped my peppers into bite sized cubes and used penne...I think next time I'll dice the peppers, the penne is great, hold the sauce really well. The sauce is amazing, I added fresh ground black pepper and an all seasoning blend to the peppers (which I softened in olive oil)
