About this Cook
I have an active family that enjoys the outdoors with our dogs, cats and horses. I balance my time between my family, a part-time job and our show horses. I have always enjoyed baking, and as an adult I came to love cooking. We prefer to eat in over eating out. Since my daughter was very young, I have hosted an annual cookie decorating party at Christmas. I love to bake Christmas cut-out cookies and let the kids creative minds decorate. Of course I'm right there decorating too.
My favorite things to cook
Cut-out sugar cookies. I make them for Valentines, St. Patricks day or 4-H events, Easter, Memorial Day, 4th of July, Halloween, Birthdays and of course Christmas!
My favorite family cooking traditions
Christmas eve dinner. Annual Christmas cookie decorating party.
My cooking triumphs
My biggest triumph is probably my profile picture, my daughter's 16th Birthday cake!

Quinoa Bowl
I made this as a side dish to complement a light fish meal. I used red quinoa because that is what we prefer. I'm not sure about the asparagus in this. It just didn't seem to fit. I will make this again, but without the asparagus but maybe some other green vegetable, maybe flat leaf kale in a small quantity.

Spicy Ginger Cookies
Quick 1 Bowl cookie with great flavor. We made a 1/2 recipe and baked it in a counter top oven. I did switch up the shortening and the butter since I only had regular shortening and had to add a 1/4 more flour because dough was way too soft. Next time I may do all butter and chill the dough for 30 minutes. 9 minute baking time was exactly perfect in my oven.

Chicken Lemon Linguine
Delicious! I served it over Zoodles (zucchini made into noodles with a kitchen gadget), which didn't absorb the sauce as much as pasta noodles would, so it was a bit saucy. But hey who doesn't like a yummy sauce! Will make again!
