Black Bean Brownies

A friend of mine made these and then I HAD to make them myself the next day. Nobody could believe there were black beans in them. Tasted great! Do add extra cocoa. The texture is different and might be unexpected.

Extra Easy Hummus

I was looking for a tahini-free, easy hummus and this is it! Not the same as the local mediterranian restaurant, but a good substitute. The versions are endless too! Throw in some roasted red pepper, or sundried tomato.

Slow Cooker Turkey Breast

Such an easy way to make turkey. I wouldn't make it any other way. Yes, I agree with earlier reviewers that it doesn't exactly look appealing when it's done, but if you put it under the broiler for a couple of minutes, problem is solved!

Meat Loaf Pie

Made this twice. First following recipe exactly except could not fit it all in. Maybe my crust was too small. Second time just threw corn, leftover crumbled meatloaf (Rempel's Family Meatloaf from this site), and leftover mashed potatoes on top and froze it. Baked it a few weeks later with a sprinkling of cheddar cheese and that worked great too.

Awesome! I combine all ingredients ahead of time except the ice and store in the fridge. Pull it out and throw in the blender with some ice when I get the craving.

Hungarian Mushroom Soup

Yum! Yum! Followed precisely as written except did not add the tsp. of salt. Thought the soy sauce covered that well enough. Has a surprisingly rich flavor.

Turkey Pot Pie II

5 stars with changes. I followed the recipe except adding my own combination of veggies. Potatoes, corn, carrots, celery, and onion to total 2 C. I did not cook anything before putting it in the pie and it came out fine. Just chop everything small enough.

Lazy Perogies

Baked Falafel

This is the first time I've ever made falafel and I don't need to search any further for other recipes. Very good and so easy. I just threw everything in the food processor. Didn't even bother squeezing the onion. I didn't have coriander so I just added a dash of curry powder for the heck of it. They were a bit mushy and had to handle them carefully until I got them into the skillet. I didn't bother with the oven. 5 min. on each side in the skillet. and they were nice and crispy on the outside. Served in pita pockets with Tabbouleh III (from this site) and Tzatziki (combination of Tzatziki Sauce I and II from this site) and was very happy with the results.

Indian Relish

This is amazing! Great sweet hot flavor and was a hit when I took it to work. I highly recommend adding some cornstarch to thicken it at the end. I also reduced the amount of vinegar and sugar. Must serve it by spreading some cream cheese on a plate and then spreading the relish on top. Very pretty too.

Cheesy Pork Chops with Spicy Apples

My favorite way to eat pork chops. I love the apple, onion, and cheddar combination. When I made them the first time, I had way more apple/onion mixture that I prefer. Maybe my apple and onion were too big? I'd cut down on the toppings or throw in an extra chop. Oh, and the red pepper flakes are vital!

Sweet Potato Bread

Yummy! I did make some changes though. 1/4 C O.J. instead of zest (didn't have any). Heavy on the sweet potato, oil, and applesauce. And reduced white sugar by 1/2 C. Also required little over an hour of bake time.
